If someone has been a vegetarian for years, they may have trouble digesting the meet, or even properly metabolizing it. This can make them feel sick.
Depending on how calm the person is, reactions could range from throwing up, to getting violent with the person who put the meat there and didn't tell them...

I'm a vegetarian [and have been for years], and if I find out, later, that I accidently ate something with meat in it, it doesn't much matter to me. Nowadays, because I have been vegetarian for so long, I tend to get sick when I eat meat products, but if I were able to eat them unnoticed, what would it matter?
After all, its only an accident. It can't hurt you [unless, like I said, you get sick, but that takes place right away], and you didn't do it on purpose. Don't worry - just keep not eating meat whenever possible!

As long as it was an accident, there's nothing that can be done about. I guess, from then on, the vegetarian in question would just have to ask the preparer of the dish, does it contain meat? Not necessarily a big deal, one that can be overcome and forgotten, it doesn't mean you're no longer vegetarian.

Oh, it happened quite often that people wanted me to 'taste' and maybe love the meat. So I ate meat not knowing.UUUGGGHHH
If the host/hostess KNEW I didnt like meat I would be angry and distrustful. About anything to do with them.
So if it was something I didnt know like a dish at a buffet and I didnt know there was meat in it but I liked the taste, I'd vomit.

It would depend on the person and the circumstances. If it were at a restaurant and the person was told there was no meat but there was, he'd probably make it known how upset he is and move on.
Regarding the statement above about vegetarians who "sometimes" eat meat, vegetarians don't eat it at all. Thats why they are called vegetarians.

I was able to detect chicken broth in a vegetable soup that was served to me (i could tell by looking/smelling) I sent it back. I get a random fried clam in my french fries every 3 years and toss it. I generally can detect meat in a meal before I eat. If I ate something and found out later, oh well- water under the bridge.

I would ask before I eat it (or look up the ingredients if possible). If I asked and got the answer that there's no meat in it, although it has meat in it, it's the other person's fault. To lie is a sin.

There not a true vegetarian if they eat it usually a vegetarian can figure out if theres meat in it or not ! if i was a vegetarian i could tell because if i had a salad and it had brown crumbly looking stuff all over it and it was greasy looking and tasting ! I wouldn't eat it! cause obviously theres meat on it!

Once he eats Meat hes no more a vegetarian now he can go on eating meat whenever he wants cos the damage is already done.

I get sick and sometimes vomit if there's an undisclosed meat product in my food. I usually figure it out that way even if nobody ever reveals it later, meaning it is a physical reaction. My body cannot handle meat.
