Does anyone have good recipes for chick peas. I have done hummus to death.

Annamaria - Hi! to answer your question I don't really have a set recipe. I start with a can of chick peas that I have drained most of the liquid off. I dump them into the food processor with about 1/4 c. of olive oil, a couple of tablespoons of sesame seeds ( you can use tahini but I always have sesame seeds in the house....I have heard of using a bit of peanut butter but have not tried that myself) a pinch of salt, some cumin, a clove of garlic and the juice of half a lemon or lime. Then I puree it smooth. Its never exactly right so I always taste it a few times for the salt, spice, oil and lemon. I like mine with either red pepper flakes or a whole jalepeno in it, but the kids and the grandparents don't always appreciate my fondness for spice.

Chickpea Soup with Fennel and Orange Zest
1 Medium fennel bulb (about 1 pound)
1/4 Cup extra virgin olive oil
2 Medium onions, chopped
4 Medium garlic cloves, minced
1 Teaspoon grated orange zest
1 Cup drained canned whole tomatoes, chopped
6 Cups vegetable stock
4 Cups Chickpeas (precooked)
Fry the you know, add the tomato's, a few minutes
add the Fennel cut in strips 7 or so minutes later and the rest
Bring to boil, reduce heat and let simmer 15 Minutes.
Then season with salt and fresh ground pepper

Here is a great, easy recipe:
Ingredients:
1 can chick peas (drained and rinsed)
2-3 cloves garlic (minced)
1/4 cup olive oil
3 tbsp parsley, chopped (optional, or any herb you want)
1 whole dry or fresh cayenne pepper chopped (optional)
Salt and pepper
Preheat oven to 400 deg. In shallow baking dish large enough to hold the chickpeas in one layer, mix all the ingredients and put in the oven for about 25 minutes or until the chickpeas are nicely browned. Basically, everything in this recipe is optional except for the chickpeas and olive oil. Try your own add-ins!
The beans are great warm from the oven, as a side dish or tossed in a salad. they have a great nutty taste and a nice bite

Omg i have the BEST recipe.. its an American way to make an Indian recipe..its GOOD and easy..I make it all the time!!!
its called Punjabi Channa with Naan
Ingredients:
(the amount of ingredients depends on how much you want to make but when we make it..it feed about 4 people)
**1 tomato
**1/2 onion
**1 clove of garlic
**about 1 tablespoon of Channa Curry Mik (it called something like that lol...you can get at an Indian Grocery Store...judt ask the pople that work there they will know)
**about 1 tabelspoon of oil
**a splash of heavey cream
**about 2 teaspoons of lime jucie
**1 can of drained and washed chick peas (Garbanzos Beans)
**Pack of Pita Bread (For Naan)
Direction:
Heat the oil in a cooking pan
Then chop (or puree) the tomato, onion and garlic then add to the hot oil stir in Channa Curry Mix, the splash of heavy cream, and about 2 teaspoons of lime jucie and mix together then let it seamier for about 15min's
After the 15min's add the chick peas to the mixture and let it cook for about another 15min's
While that is all cooking.. heat up some pita bread on the grill or in a pan to eat with the Channa
When the other 15min's to cook the Channa it done take off heat and serve with warm Naan (pita bread) (In a dish of course lol)...Enjoy!

LOVE Chick Peas!
Pasta Chick Pea Salad
INGREDIENTS:
1 (16 ounce) package rotelle pasta
2 tablespoons extra virgin olive oil
1/2 cup chopped oil-cured olives
2 tablespoons minced fresh oregano
2 tablespoons chopped fresh parsley
1 bunch green onions, chopped
1 (15 ounce) can garbanzo beans, drained
1/4 cup red wine vinegar
1/2 cup grated Parmesan cheese
salt and pepper to taste
DIRECTIONS:
Bring a large pot of salted water to a boil, add pasta and cook until al dente. Drain and rinse under cold water. Set aside to chill.
In a large skillet heat the olive oil over medium low heat. Add the olives, oregano, parsley, scallions and chick peas. Cook over low for about 20 minutes. Set aside to cool.
In a large bowl toss the pasta with the chick pea mixture. Ad the vinegar, grated cheese and salt and pepper to taste. Let sit in refrigerator overnight. When ready to serve taste for seasoning and add more vinegar, olive oil and salt and pepper if desired.

Falafel!
1 lb can chick peas drained
1/2 cup bread crumbs
1 egg
1 large onion, chopped
2 Tlbs chopped parsley
1 tsp. cumin
1 tsp. garlic powder
1 tsp. salt
Olive oil to fry in
Combine it, make balls or patties about 2 inches in diameter. Cook on medium heat till golden brown. Plain yogurt mixed with lemon juice makes a wonderful dipping sauce.

Do you have a crockpot? I tend to make this one alot in the cooler months for my family.
Ratatuille with Garbanzos (chick peas)
3 Tbsp olive oil, divided
6 cloves garlic, minced
1 large onion, diced
4 small or two medium eggplants, peeled & cut into 3/4" dice
salt & pepper to taste
3 colored bell peppers, seeded & cut into 3/4" dice (i usually use one each red, yellow, & orange)
4 small or two medium zucchini, cut into 3/4" dice
3 cups cooked garbanzos
1 can (28 - 32 oz) crushed tomatoes
1/4 C fresh or 2 Tbsp dried basil
2 Tbsp fresh or 1 1/2 tsp dried thyme
1/2 - 1 tsp crushed red pepper flakes
Heat 1 Tbsp olive oil in skillet over med-low heat. Cook garlic and onions for 2 - 3 minutes or until translucent (don't brown). Add eggplant and cook for 1 - 2 minutes. Turn heat to low, cover, and cook for 4 minutes or so, until eggplant is just tender. Season with salt & pepper to taste. Add to crockpot coated with cooking spray. Add peppers, zucchini, and garbanzos to the crockpot. Combine tomatoes, basil, thyme, pepper flakes and remaining oil in a medium bowl, mixing well. Pour over ingredients in the crockpot and give it a stir.
Cover crockpot and cook on low for 7 - 8 hours or high for 4 - 5 hours. Taste and adjust seasonings as needed.
This is great over rice (white or brown), quinoa, or noodles.
