Potage de Garbanzosy Espinaca

Ingredients:

200g dried chickpeas
1 carrot, chopped
1 stick of celery, chopped
2 medium onions, chopped
large bunch of spinach, washed and chopped
1 large beef tomato
6 cloves garlic, chopped
1 bayleaf
1 tbs paprika
1 tsp sugar
salt
olive oil
Method:

Soak the chickpeas for eight hours, or overnight, in plenty of cold water.

Place the chickpeas, carrot, celery, half of the chopped onion, and the bayleaf, in a large pan. Cover with cold water, bring to the boil, and boil hard for ten minutes. Lower the heat, and simmer for one hour, or until the chickpeas are soft.

Fry the rest of the onion in a little olive oil, until softened, then add the garlic. Peel the tomato, by dropping in boiling water, then straight into cold water, which helps to loosen the skin. Chop, and add to the cooking onion and garlic, along with the paprika and sugar, and a pinch of salt. Once heated through, lower the heat, cover, and cook gently for ten minutes, stirring frequently (you may need to add a little water to prevent sticking).

At the same time, add the spinach to the chickpea pan. When the onion/tomato mixture has cooked for ten minutes, add to the chickpeas. Check the seasoning, and serve with warm chunks of bread.



Sweet potatoes with spicy black bean chili

Sweet potatoes for two people.
One can black beans.
One can Mexican seasoned stewed tomatoes.

Bake or nuke sweet potatoes until soft. While they're cooking, simmerblack beans and tomatoes together untill the mixture gets a littlethicker (about 10 minutes). Open up the sweet potatoes, mash slightlywith a fork, put the bean and tomato mixture on top. Eat.

If you're ambitious you can saute some green pepper in oil before addingthe canned stuff, and you can put some tofutti sour cream and cilantroon top.

Jambalaya

Ingredients

1 package Zatarain's Jambalaya Mix
1 package Green Giant brand fake hamburger
1/2 - 2/3 of a mediumish onion, chopped
Badia Louisiana Hot spice.
2-3 cloves garlic, grated.
Olive oil
Prepare the Jambalaya mix as per directions. Add some Louisiana Hot to the water when it comes to a boil.

Put oil in frying pan and heat, add garlic and sautee 'till fragrant. Add onions and spice. Sautee 'till done. Add fake hamburger and cover with hot spice. Stir 'till the fake hamburger is hot.

When Jambalaya is done add to the hamburger/onion mix. Mix and eat. Simple and relatively quick.

Strawberry Sorbet

Ingredients:

500g strawberries, hulled
4 tbsp lemon juice
150ml orange juice
200g sugar
Method:

Blend together all the ingredients, then pour into a shallow freezer-box.

Cover and freeze for 3-4 hours, until frozen but still soft.

Spoon into a chilled bowl and whisk until smooth but still frozen.

Return to freezer box, and freeze again until firm.

Remove from freezer 10 minutes before required.

Ingredients:


2 cups flour

1 tsp yeast

1 tsp saffron powder

1/2 tsp geera

1/2 tsp salt

1/3 cup warm water

1/4 tsp sugar

Method:

Combine flour, salt, saffron and geera in a small bowl. Add warm water to sugar and yeast, allow to stand for 5 minutes. Add yeast mixture to dry ingredients and add water to make a light dough. Mix well and cover with a damp cloth. Let dough rise for 1 ½ hours. Drop mixture by tablespoon onto a lightly floured surface. Using slightly damp or lightly floured hands flatten or pat dough into small circular shapes. Deep fry until edges are golden brown. Serve two bhara (hence the name Doubles*) hot with cooked channa and pepper sauce. Enjoy!

I would love to try vegan cooking and I am a died in the wool meat eater. I wouldn't worry about it. Just cook up your favorite best dishes and call it good. Your friends know you are vegan and will probably expect something yummy and different. I would. I love trying different types of foods.

Veggie and Chick Pea Curry :) Throw your favorite stir-fry veggies in a pan, add a bit of curry paste (available at most grocery stores in the asian section), add a can of coconut milk, cook and enjoy! I'm not vegan, but I try to have a few no-meat meals every week. This is a favorite of mine! Try putting sweet potatoe in the mix... very yummy!

Try adding a bit of mesquite to the barbecue before grilling your vegan to improve the flavour, and be sure to marinade your vegan for days first as they can be a bit tough and stringy otherwise.

Dhal

1/2 packet of lentils (well washed)
Cover with water in pan.
Add flat dessert spoon of chilli powder and salt.
Add 1/4 dessert spoon of tumeric, garlic powder, cumin powder and 1 tsp cumin seeds.
Boil till cooked.

Delicious!

Vegan Pate

Ingredients:

soya flour
olive oil
yeast flakes
garlic, crushed or grated
tamare or soya sauce
herbs.

Mix together equal quantities of soya flour, olive oil, and yeast flakes; you may need to make slight adjustments to achieve the required texture.

Add garlic, tamare/soya sauce, and herbs of your choice.

Much nicer than the stuff in tubes!
