My friend just gave me a couple of beets yesterday from her garden and I don't know how to prepare them. I am boiling them now, and then I am going to remove the skins, but then what? Help!

Let them cool Slice them into little sticks smaller than a pencil. Add some cooked beans, green beans, carrots, sliced raw zucchini and sunflower seeds. Toss them in a vinaigrette or tahini/lemon/garlic dressing and serve as a cold salad.

Beet Salad Recipe
1 quart cooked beets, diced
1/2 teaspoon black pepper
1/2 cup mayonnaise
2 onions, diced
2 boiled eggs
Salt to taste

COMBINE all together; PLACE in bowl lined with lettuce leaves.

Next time, try ROASTING or BAKING them, they're great that way!

Here is a simple beet soup recipe. My grandma makes it and its realllyyy good but this isn't her recipe (it sounds similar though)
