I have both, a 'Weber' gas grill, (The Silver Genesis), and a 'Weber' Charcoal. I prefer the flavor of charcoal, but the convienence of gas, especially in the winter, is a plus.
If using charcoal, try to get the hardwood charcoal rather than the briquets. It burns more evenly, as it has no 'fillers', and I think it gives the best flavor. It's a bit more costly, but nothing that will break the bank. Also, when done cooking, shut the vents, put the lid on the grill, and the charcoal will go out, and can be re-lit the next time.
I never use starter fluid. Instead, use a charcoal chimney. This is a device where you 'load' the charcoal in the chimney, and then stuff wads of newspaper in the bottom. Set this in the grill and light the newspaper. As the paper burns, it ignites the charcoal. Here's a tip. Spray the newspaper with a small amount of oil, (i.e. Pam or canola oil), before wadding it up, and it acts like a candle wick, and burns slower.
I have had 4-5 different brands of gas grills, and the 'Weber' genesis is far-and-away, the best I have ever had. You have great control over the temperature from low to high, which is great when cooking bratwurst or boneless chicken breasts, (low, and turn frequently), or steaks, (high and turn only once with tongs or spatula = never use a fork). The Silver Genesis also does not have that side burner, which is a useless feature on a gas grill.
Although you have some control with the charcoal by adjusting the flow of air, (using the vents), it's not as accurate as the Genesis. When I cook with charcoal, I just have to watch it more closely.
By the way, are you aware that the charcoal briquet was invented by Henry Ford?

A charcoal grill is so much better then gas. Charcoal gives this good flavor to the meat that you are cooking like a smoked flavor or something but it makes it taste really good! Gas may take less time but you cant beat the good taste of the charcoal its the best!

Charcoal tastes better but is so messy. I have a gas grill and you can't tell that much difference is a lot more convenient than cleaning up and buying charcoal all the time.

Vets1son's answer should be the winner! I would like to comment though to directly answer your question: CHARCOAL wins hands down for taste. Lump Hardwood Charcoal... no briquettes as noted also. Henry Ford made his charcoal from floor sweepings! SO go Au Natural with the lump stuff. Well worth it and well worth the effort.

to make food tastier, you have to go with charcoal. You can get the mesquite taste inside the food and makes it a million times better.
Gas is just for cooking food faster.

Charcoal is defenitely tastier. Prpane however is easier and far more convenient. I think gas's benefits out weight the small flavor downside.

We have a Weber charcoal grill and we love it. I think that we can do a lot of different things on it that you can't do on the gas grill. And I think that the cooked flavor is better.
