My mom spent a year in Lebanon. There are a million great vegan arabic recipes. Hummas, Baba ganooj (eggplant dip but if you don't like eggplant, don't judge it till you've tried it... it's totally different!), pita, falafels, tahini, Tomato/cucumber salad, tabouli, stuffed grape leaves, zatar (a mixture of herbs and spices you can buy at middle eastern stores) with olive oil, and couscous with vegetables, just to name a few.

what about it i am Arabic i like stuffed grape leafs, hummus, kibbie ny, kusa, i might not have spelled these properly but spell check does not correct Arabic

there are lots of that.. there's molokheya, mahshy .. from deserts, there's konafa, katayef, basboosa, fteer.. there are lots of arabic food.. better search google.
