This is the tofu recipe that opens everyone's closed minds about this much maligned ingredient. The texture of the tofu was described as "similar to chicken and fish but not." I came up with it after many (failed) attempts at creating the perfect meatlover's tofu dish. The key is in the freezing of the tofu, so make sure you plan ahead. Prep time does not include freezing time.
1 (14 ounce) package extra firm tofu
1 cup marinade (I like a spicy peanut satay sauce)
1/2 cup flour (to dust)
1-2 tablespoon oil
Place the tofu (still in its packaging) into the freezer for at least 24 hours. Keeping it in there longer doesn't hurt it.
Remove the tofu from the freezer and defrost by bringing a pot of water to a boil and placing the frozen block of tofu (still in its packaging) in the pot for 10 minutes or until defrosted.
Remove the tofu from the packaging (finally!) and cut the block laterally in half so you have two block-sized slabs that are half the width.
Slice each slab lengthwise into three and place on a clean dish towel or paper towels. Cover the six pieces with another dish towel and place a cutting board or baking tray or other flat object on top. Place heavy cans or books onto the board and let sit for 15-30 minutes.
Cut the tofu lengths into cubes and place into marinade for a minimum of 30 minutes.
Remove from the marinade and dust the tofu cubes with flour.
Heat the oil in a frying pan over medium heat.
Shallow fry the cubes until all sides are golden brown and crispy.
Serve hot with rice or couscous and a puddle of the marinade as a dipping sauce.

Get the firmest tofu you can. Don't buy "silken" style for anything but dips or sauces. The easiest tofu dish would be to slice or cube it and fry it in a nonstick pan with oil on medium high. Fry it until it gets golden brown and turn down the heat. Add two tablespoons of soysauce to season it, flipping it around in the pan to cover all the surfaces with the soysauce.

I love agedashi dofu. If you go to a japanese restaurant, try this appetizer. It's heavenly...you can even make it yourself.
-Lightly coat the tofu w/ corn starch or potato starch
- Fry them w/ little oil, just a little bit until the starch is cooked.
- Prepare the sauce (soy sauce w/ bonito stock)
- Mix the sauce w/ chopped scallion
- Put the tofu in the sauce.
Another fave of mine is stuffed tofu.
- Cut the tofu into triangular shape.
- Make a tiny hole
- In the mean time, prepare the filling (it could be anything, i usually mixed ground turkey w/ chopped mushroom and carrots)
- Fill in the tofu holes w/ the meat mixture.
- You can either boil them in chicken stock (in low heat just until the meat mixture is cooked) or you can fry them.

At work we use the tofu that comes in a brick shape sealed in a container with water around it...
Dice the tofu in medium size cubes, saute it with vegetables like grated carrots, bell peppers, onions, snow peas, baby corn, water chestnuts, broccoli and bean sprouts...do a flash saute on all of this and add Teriyaki sauce and garlic salt or powder, salt, and a little ginger....it is fabulous

Extra firm Tofu fried with Worstechire Sauce YUMMY!
and You can make "Ice Cream" with it also.
soft Tofu
Vanilla extract
Maple Syrup
Blend all together and freeze
Add Mug Rootbeer or any other soda
Delicious!
