I am not vegeterian but i have alot of friends who are and would like them to feel comfortable in my house when they come visit. i want them to be able to eat good food in my home so if someone can share it would be amaizing thank u in advance

Baked Corn

Everybody asks for the recipe!

INGREDIENTS:
2 cups whole kernel corn
1/4 cup chopped onion
1/4 cup green bell pepper, chopped
25 g margarine
2 tablespoons all-purpose flour
1 teaspoon salt
ground black pepper
3/4 cup milk
1 egg
1/3 cup cracker crumbs
1 tablespoon butter, melted

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a large skillet, saute onion and green peppers in the margarine. Using a wooden spoon, stir flour, salt, pepper and milk into the sauteed mixture. Stir corn kernels and egg into the mixture before pouring the entire concoction into an ungreased medium-size casserole dish.
Combine cracker crumbs and melted butter in a small bowl. Pour the mixture over the casserole.
Bake in a preheated 350 degrees F (175 degrees C) oven for 30 to 35 minutes.

As a snack or an appetizer, you can serve this roasted garlic hummus along with some pita bread:

Spicy roasted garlic hummus recipe :

*2 cans chickpeas
*1 whole head of garlic roasted and removed from skin
* 2-4 tablespoons of tahini (sesame paste)
*Juice from 2 lemons
* 1/3 cup extra virigin olive oil
* Handful fresh parley, roughly chopped
* Sesame seeds for garnish
*Spices: Chili powder or dried red chilis (optional), 1-2 Tbs cumin, salt to taste

To roast the garlic, take one whole head and slice the top 1/4th of it off, just to expose a bit of the meat. Place it in a pouch of tin foil & drizzle it with olive oil. Close up the pouch and roast it in a 375ºF oven for about 45 minutes. In a food processor, combine the chickpeas, garlic, lemon juice, chilis, tahini and cumin. Stream in olive oil until you get the consistency that you like. At this point, be sure to stop and taste the hummus to see if it needs more spices. Add salt and purée one last time. Empty the contents into a large bowl & stir in the chopped parsley with a spoon. Garnish with a drizzle of olive oil, a sprinkle of sesame seeds, and a little bit of parsley.

Three cheese pasta...
Use any pasta like penne or ziti or the spiral pasta. Cook and drain the pasta add to it marinara sauce, you can buy it in a jar or make your own, add cottage cheese, grated mozzarella and cheddar cheese. Put it in an oven safe dish and cover the top with cheese. Bake on 325 for about 30 to 40 minutes.

Zucchini Parmesan
Slice your zucchini thin and saute it in a skillet with a little vegetable oil. Lay it out on a platter or in a shallow dish, cover it with marinara, grated Parmesan cheese and top with a sprinkle of dried parsley leaves for garnish.

Try making avocado sandwiches. It's really simple...just butter 2 slices of bread with margarine, put in lettuce, cucumber slices, tomato slices, and thin avocado wedges, season with salt and pepper to taste (you can sprinkle some oregano or parsley if you want), and serve!
For soup, I adore tomato soup made from vegetable stock or just water. Boil roma tomatoes, diced potatoes, chopped celery, and chopped onions in the stock or water, till everything is soft and well cooked. Season to taste. Transfer to blender and blend. Serve hot or cold with fresh parsley garnish, and croutons if your guests like them.
If you want something oriental, steam soft toufu topped with chinese preserved mixed vegetables, till cooked. It's heaven when taken with rice.

Veggie Fajitas

1 sliced up portabella mushroom
1 sliced up green bell pepper
1 sliced up orange bell pepper
1 sliced up red bell pepper
1 sliced up yellow bell pepper
1 small yellow onion, sliced up
2 garlic cloves, crushed
Cayenne and black pepper

Sautee all veggies in a skillet in extra virgin olive oil. Serve on warm flour tortillas with guacamole or salsa:

My special suicide salsa:

3 ripe large tomatoes, roughly chopped and smushed
1 white onion, diced
2 jalapeno peppers, diced (leave in seeds if feeling brave)
1 sarano pepper, diced (again, if feeling brave)
Teaspoon of habanero juice (if feeling OMG, r u insane?! brave)

Mix all ingredients in a bowl, chill, serve.

Quick and easy rice dish

1 cup brown, wild, or whole grain rice
3 ripe tomatoes, chopped up
1 diced yellow onion
1 garlic clove, crushed
1 cup sliced almonds
Salt, pepper, parsley, oregano, sage, and tagagon to taste

Cook rice and sautee veggies in a skillet in extra virgin olive oil, adding herbs and seasoning. Stir in rice, add almonds, and serve.

I was a vegitarian for 3 years, one of my favorite meals was cheese ravioli with alfredo sauce. I bought cheese ravioli at teh grocery store and a jar of pre-made ravioli, boled the ravioli, then added the sauce. Everyone, vegie and non has loved it. Also, it's very simple!
