Mash some soft tofu, fry in a little oil for 2 minutes, add a teaspoon of soy sauce and serve on wholemeal toast spread with mashed avocado.
Great start to the day with an orange juice.

Peanut Butter Oatmeal

Ingredients
• 2 cups water


• 1/2 teaspoon salt


• 1 cup quick-cooking rolled oats


• 1/3 cup packed brown sugar


• 1/4 cup Jif Creamy Peanut Butter


• 2 tablespoons butter or margarine


Directions
• Bring water and salt to boiling in a medium saucepan.


• Add oats and boil for 1 minute.


• Remove from heat and stir in brown sugar, Jif and butter or margarine.


• Makes 3 to 4 servings


Potato Pearls

ING:-

1 pound potatoes
1/2 C chives or green onions, finely chopped
1/2 C wheat germ
1/2 t paprika
Salt and pepper to taste

Preheat oven to 375° F. Cover potatoes with water and boil until soft. Peel and mash, adding onions, salt and pepper. Shape into 1-inch balls. Mix the paprika and wheat germ together in a dish and roll potato balls in mixture until coated. Coat baking sheet with 1 second of a non-stick spray and spread with a paper towel. Bake for about 20 minutes. Serve hot, a toothpick in each.

Many foods that were formerly fried can be baked or broiled. Vegetables can be coated with a savory coating and heated till golden brown. For an easy shake-bake coating mix 1/2 C corn flakes. finely crumbled, 1 t light seasoned salt, 1/2 t each: paprika, sage, onion powder, 1/4 t each: garlic powder, thyme, pepper. The foods to be coated can be moistened or dipped a mixture of 4 T EnerG egg replacer and 8 T water, beaten to a foam. Bake at 375° F. for 15 minutes or until browned and crispy. Serve and eat immediately.

Sure.

Make a piece of toast, slather it with peanut butter, and slice up a banana on it. (The banana's just for taste, as I find plain peanut butter a bit boring.)

You could try the most delectable smoothie in the world—blend together about a cup of soymilk, a banana, three or four dates (remove the pits if they're fresh dates; soak them in hot water for ten minutes if they're dried dates), a teaspoon or so of vanilla, a dash of cinnamon, a couple of teaspoons of maple syrup, and a huge spoonful or two of almond butter.

You could also look online for recipes for tofu scrambles. If you like tofu, you'll probably like them.

morningstar farms makes great breakfast stuff...like "sausages" and "bacon"...they have a lot of protein....

also you can buy protein powders for vegans and just make a smoothie....fruits...ice...soy milk if you drink that...and then some of the protein powder....you can mix up the flavor of the smoothies by what fruits you put in....
