My husband and I recently indulged in a hispanic delecacy I had never heard of until now. It consisted of corn on the cob, mayo, butter and a grated white cheese. I know it wasn't parmesan, and I asked the young senorita what it was, but...I couldn't understand her and didn't want to embarrass or insult her. So...what was it?

Cotija ( ko-tiha)
Known as the "Parmesan of Mexico", this cheese is strongly flavored, firm, and perfect for grating. It is used in Hispanic cooking in a manner similar to the way Parmesan is used in Italian cooking. Cotija is commonly used to add a lively garnish to common dishes: simply sprinkle on top of refried beans, salads, chili or lasagna. In Mexico it is also widely used to enhance the flavor of many savory dishes by mixing directly into the casserole or recipe. In the U.S. it is increasingly popular on pasta. Probably Monterey Jack cheese.
It's about the same color as parmesan but I live in Texas(LOTS OF MEXICAN FOOD)....and I know that Jack cheese is usually what they use.
Sometimes, goat cheese but more likely it was Monterey Jack.

They put it on everything and so do I. Almost.
I love it! It's one of my favorites!

Goat's cheese. It has somewhat of a strong parmesan-like smell and flavor to it.

I am sure it was Manchego, which is available in some gourmet stores and upscale supermarkets.

in chicago they do use parmesan cheese
