I've been a vegetarian all my life and my absolute favourite recipe is sooooo simple: Bean Burrito
Tortilla shell
Refried beans
Melted cheese
Salsa on top
My mom make a GREAT vegetarian Stew:
It has potato, onions, carrots, sattan (a type of tofu)
For the sauce, she adds Tamari, garlic, Italian herbs, olive oil, a little salt and although it sounds odd, it's delicious!

This is my favorite :
Baked Corn
INGREDIENTS:
2 cups whole kernel corn
1/4 cup chopped onion
1/4 cup green bell pepper, chopped
25 g margarine
2 tablespoons all-purpose flour
1 teaspoon salt
ground black pepper
3/4 cup milk
1 egg
1/3 cup cracker crumbs
1 tablespoon butter, melted
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a large skillet, saute onion and green peppers in the margarine. Using a wooden spoon, stir flour, salt, pepper and milk into the sauteed mixture. Stir corn kernels and egg into the mixture before pouring the entire concoction into an ungreased medium-size casserole dish.
Combine cracker crumbs and melted butter in a small bowl. Pour the mixture over the casserole.
Bake in a preheated 350 degrees F (175 degrees C) oven for 30 to 35 minutes.

My favorite vegetarian recipe is for "bachelor sandwiches". It's not vegan because of the worchester sauce and smells questionable while it's cooking, but it's simply delightful with grilled onions and red bell peppers.

You might as well cook tofu vegie soup......
1 Tofu, cut into cubes
1 medium size carrot, cut into cubes
3 stocks celery, thinly cut
dried mushrooms, cut into strips
1 beated egg
1 chicken cube
Simply boil 3 cups of water with chicken cube, tofu, carrots, celery and mushrooms for 5 minutes. Then add the egg. Serve.
Yummy.....
Here's another one......
Mash the tofu and mix with 1 beaten egg and 1 grated carrot. Put in a molder and steam in a steamer or deep fry. Serve with mayonnaise or catsup.

Oven roasted veggies - just cut up everything you like... all colors of bell peppers, potatoes, sweet potatoes, yellow and green squash... vidalia onions... mushrooms... you name it. Drizzle some extra virgin olive oil over it, add salt and pepper, toss it in a big bowl, then spread out on a cookie sheet and roast in the oven at 450 degrees for about 45 minutes or until everything is tender.
You can skip the potatoes and put this over pasta... you can put it on rice... you can put it on a sandwich... you can whiz it up in the food processor and make a sauce out of it to drizzle over scrambled eggs... it's very versatile.

Veggie Noodle Soup
3 cans veggie broth
2 cups frozen mixed veggies
2 cups favorite pasta (shaped, cheese stuffed, noodle, etc)
Bring broth to a boil - add pasta, cook until about half way done, then add veggies and simmer until pasta is done. Add salt/pepper/garlic to taste, if desired.
Easy, filling and can be easily halved or doubled!

Stuffed cabbage rolls
you mix ground tofu or soft will do any kind of veggies you like finely chopped or grated IE., carrots, onions, peppers mushrooms... mix with tomato sauce, garlic, salt pepper. wrap a spoonful of the mixture in cabbage leaves and place in crock pot. cover with V8 juice and simmer all day on low. when you come home from work yum, yum dinner is served!

Here's one I like -
Roast some vegtables (I use 3 colors of peppers and onions)
Thicken some soy milk (as plain flavored as you can find) with a medium roux, season (salt, pepper, dry mustard) stir in the roasted vegetables and serve over tubular pasta like rigatoni. The roux gives the soy milk flavor and helps it stick to the pasta.
