Chocolate Chip Cookies
1/3 cup (75 mL) margarine, softened
1 egg
1 tsp (5 mL) vanilla extract
2/3 cup (150 mL) SPLENDA* Granular
3/4 cup (175 mL) all-purpose flour
1/2 tsp (2 mL) baking soda
1/4 tsp (1 mL) salt
1/2 cup (125 mL) semi-sweet chocolate chips
With an electric mixer, cream margarine for 1 minute. Add egg and vanilla and beat on high for 1 minute. Add SPLENDA* and beat until well blended.
Combine flour, baking soda and salt; beat into mixture until smooth. Stir in chips.
Drop from small spoon onto ungreased baking sheets. Flatten slightly with back of spoon.
Bake at 375F (190C) for 8 to 10 minutes or until browned on bottoms. Cool on rack. Store in air-tight container.

1/3 cup, heaping splenda
1/3 cup, heaping brown sugar splenda
1 egg
1 1/2 tsp vanilla flavoring
1 cup chocolate chips, either sugar-free or chopped Hersey sugar-free dark chocolate, whatever you can find
Mix first three ingredients and set aside. Beat together both sugars and butter until smooth. Add egg and vanilla. Then add dry ingredients and mix. Stir in chips.
Bake at 375; be sure to pre-heat.
Best baked in pan, 12-15 minutes, and then cut into squares after cooled. May be slightly over-moist.

None off the top of my head, but I did discover that, although Splenda says it is measure for measure with sugar, it makes the food taste kinda hinky. Use about 1/4 less Splenda and about a tablespoon more of butter. If it calls for butter. The consistancy will be a little better.

1 3/4 cups all purpose flour

1/2 teaspoon salt
6-oz. pkg. (1 cup) chocolate chips
1/2 cup chopped nuts or sunflower nuts, if desired
heat oven to 375F. In large bowl, beat brown sugar, sugar, margarine and shortening until light and fluffy. Add vanilla and egg; beat well. Add Flour, baking soda and salt; mix well. Stir in chocolate chips and nuts. drop by teaspoonfuls 2 inches apart onto ungreased cookie sheets. Bake at 375F, for 8 to 10 min. or until light golden brown. Cool 1 min.; remove from cookie sheet. 4 dozen cookies.
