No doubt it is safe for few days but when they turn gree, that normally an indication that it has gone bad just like any other fiid in the fridge. It is convenient to have it ready I suppose but would you trade that for quality? There is nothing like a fresh garlic and ginger.

Ginger Garlic Paste - it the basic ingredients in almost all of the Indian curry - thus making it sufficient for 2 months is a good idea and it doesn't need any preservatives. While grinding add some salt - and keep the paste in cold condition +5 degree which can remain good for 2 months.

it's always advisable to make your fresh ginger and garlic paste separately, and use. as we have to add some water while making the paste, it remains good for about 3 days. don't make too much at a time, just adequateto last that much only.
if you buy ginger-garlic paste from the market, it will last a little longer, as having added some preservtives. what i would suggest is, when you buy ginger from the market, clean it, wipe it, and wrap in polythene bag, store. similarly, peel the garlic, enough for a day or two, and keep it in an airy place, covered, but not in the fridge, and just make it into a paste, before coking. i will have a better flavour, and safe to use.

Yes, it's safe but like all foods, it doesn't last forever. Most pastes in jars can last several months. Usually my ginger paste lasts longer than minced garlic, but ginger will lose it's flavor when you keep it too long. Basically, just buy the smallest container you can of each and replace it every 2-3 months. It's cheap enough... And if you're concerned about food safety, I think as long as you cook both, it should be fine (the minced & pastes are usually for stir fry methods anyway).

If it is green, toss it out. However, garlic and ginger will last a long time in the fridge....months. at least.
