I read The Higher Taste almost 20 years ago. I don't know if the edition published now is the same, but in addition to the recipes (some of which I've used) it had nine or ten chapters based on different arguments for vegetarianism (economic, ecological, ethical, health-related, etc...) It was these essays that convinced me to go veg, literally. I finished reading them and announced to my sister that I would never eat meat again, prompting her to read them; neither she nor I have ever looked back.

Got a couple of copies at festivals
Some of the recipes are OK,though the absence of garlic and onions is strange to my tastes.(I know its for religious resons,dont pull me on that)
Easy to cook in bulk,and I used to sell them at festivals,always seemed go down well.Mostly cheap to make too
By the way Im not vegetarian,though I have cooked for a lot
Vegans who wear leather boots anoy me,and imitation meat products,burgers etc.Eat veges that look like veges dammit!

mans brain needs an enzyme found only in red meat, but with all the beef being infected w/mad cow it might be safer not to eat too much of the stuff,oh yah recipes look pretty tast-ee

The philosophy part is interesting. As for the recipes, they seem okay.
