I have a recipe for Enchilada casserole & spanish rice for you below:
Enchilada Casserole, aka Stacked Enchiladas
2 lbs lean ground beef, 15% fat, or 8 boneless, skinless chicken breasts, cut into small pieces
1 large can Las Palmas green chili sauce, yellow label (if you choose medium, your enchiladas will be on the spicy side.)
16 oz or larger container of sour cream, any brand
1 4 cup package pre-shredded mexican blend cheese, any brand
1/2 red, brown or white onion (or 5 Tblsp minced dried onion)
Garlic powder, black pepper, seasoned salt
36 count package corn tortillas, white or yellow corn
2 cans pre-sliced black olives, if desired, drained
Brown ground beef & onion in frying pan, draining all grease. Season to taste with garlic powder, seasoned salt & black pepper. If using chicken, bake in oven for 35 mins for thawed breasts, If slightly frozen, bake for 45-50 mins, cutting in the center to check if done.
In a large bowl, pour green chili sauce in & add sour cream. Blend with spoon well to remove all sour cream lumps. In a tall, white pyrex dish with lid, line bottom of dish with 4 corn tortillas, overlapping them & getting to the edge of the dish as best as possible. Spoon sour cream sauce onto tortillas. Using a different spoon, spread hamburger or chicken over sauce. Sprinkle cheese over meat. If using olives, sprinkle them here too. Cover with 4 more corn tortillas to form another layer. Repeat sour cream sauce, meat, cheese, olives & tortillas until done. Press down gently between layers to ensure plenty of room before spooning on sour cream sauce. If you reach the top & have tortillas as last layer, spoon sour cream sauce over top, cheese & olives. Cover with lid & microwave for 15 minutes. Watch for bubbling over sauce.
Serve with refried beans, spanish rice & salad.
Spanish Rice
This recipe came from my great-grandma & has been used by 3 generations so far.
1 cup white long grain rice
2 cups water
2 garlic cloves
extra virgin olive oil, about 4-5 Tblsp
1 8 oz. can tomato sauce, any brand
1/3 red, white or brown onion
1/3 bell pepper, optional
1/3 celery, optional
seasoned salt
In a saucepan, pour in olive oil, using just enough to coat the bottom lightly. Pour rice in & garlic cloves. Brown rice lightly, stirring often using a plastic or silicone spoon. Slowly add water, tomato sauce & onion. If using bell pepper and/or celery, add them now too. Shake seasoned salt on top, about 3-4 light to medium shakes. Stir gently with plastic or silicone spoon. Cover with pan lid. Reduce heat to low, or if stove knobs have numbers, reduce to 4. Set timer for 20 minutes. Check in 10 minutes to see how rice is cooking. It should be boiling gently. Check again in 5 minutes. If rice looks dry, it's done. If not, let it cook another 5 minutes. Garlic cloves can be served inside rice. I usually take them out & place them on top so that no one who doesn't like garlic get them on their plate.
Serve rice with enchilada casserole, tacos, tostadas, or inside burritos.
I don't know how to make chimichangas. Sorry.

Just to let you know a lot of these(i wont say which ones i do not want to offend anyone) are not actually mexican food, some are spanish some are americas version of mexican food. also if you want to try real mexican food as you say, you might have to try some things that you have not tried before. i can give you the recipe for lots of stuff i will give you the names of the dishes and you can wirte me and let me know which recipes you want because on here it would take up too much room. all of these things are very simple:

enchiladas
taquitos
tacos(like the ones on the taco trucks)

pozole
white/red rice
arroz con leche(rice with milk)
mole(chicken with rice)

chilaquiles(it is kind of like a mexican lasagna

refried and regular beans
ceviche(shrimp tostadas)
carne asada(steak)

Mexican Pot Roast

Ingredients:
6 lb Beef Roast; *
8 ea Cloves Garlic
4 ea Slices Bacon, Cut In Half/optional
2 t Salt
1/2 t Pepper
1/2 c Mustard; Prepared
1/4 c Vegetable Oil
1/2 c Carrot; Chopped
1/2 c Celery; Chopped
1/2 c Mushrooms; Sliced
2 T Fresh Cilantro; Snipped
1 t Nutmeg; Ground
1 t Thyme; Ground
2 ea Jalapeno Chiles; **
2 ea Bay Leaves
1/2 c Onion; Chopped, 1 Medium
12 oz Beer; 1 Btl Or Can, Any Kind
* Beef roast should be a arm, blade, or cross-rib roast.
** Jalapeno chiles should be seeded and finely chopped.

Serves 12
Method:
Make a 1 1/2-inch deep cut across the beef roast. Wrap each clove of garlic in 1 piece of bacon and insert in the cut. Sprinkle beef with salt and pepper and spread the prepared mustard on. Cover and refrigerate at least 4 hours. Cook beef in oil in a 4-quart Dutch oven over medium heat until brown. Stir in remaining ingredients. Heat to boiling and then reduce the heat. Cover and simmer until beef is tender, about 2 1/2 hours. Remove beef to warm plater. Remove bay leaves from the broth. Skim fat from the broth. Place 2 cups of the broth and vegetables in a blender container; cover and process on medium speed until smooth. Serve with the beef.

Nachos are good, and easy. Get some tortilla chips (I like tostitos "taste of lime". Get some kraft shredded mexican cheese medley. Arrange the chips in a flat baking pan, cover with the cheese, and pop them in to a 400 degree oven until the cheese melts. Yum!
Can also make this with some beans and/or salsa and/or guacamole and/or sour cream.

I buy the already prepared fajita chicken strips.
I combine 3 cheese Mexican blend, chicken and salsa
Roll everything up in a flour tortilla . I secure it with a toothpick and deep fry until golden brown.
This is so tasty and very easy. Hope you enjoy.
oh yeah...zataran's make a really good yellow rice that goes really well with this. Tons of flavor.

Here's a low car breakfast one:
Tex-Mex Breakfast Casserole
The Inn at Chatham
Chatham, Virginia
1 tbsp. oil
1 medium green pepper, chopped
1 medium onion, chopped
1 lb. ground turkey, fresh
1 pkg. (1.6 oz.) Burrito seasoning
1/2 cup water
1 1/2 cup salsa
2 cups grated cheddar or Monterey jack cheese
12 eggs, slightly beaten
1 1/2 cups sour cream
Saute onion and green pepper in oil in large fry pan until transparent. Remove from pan. Sauté ground turkey in the same pan until lightly browned. Add burrito seasoning, stir, and add water and blend well over medium heat. Cook together 3-4 minutes. Add onion and peppers to turkey and cook together 3-4 minutes to blend flavors. Remove from heat. This mixture can be made a day in advance and stored in refrigerator.
Spray quiche pans with cooking spray. Spread half of salsa in each pan. Divide turkey mixture and spread over salsa. Top each with 1-cup cheese. Beat eggs and sour cream, pour over turkey. Bake at 375 degrees 45-50 minutes until puffy and knife inserted in center comes out clean.

Ok, chimichangas aren't Mexican food. They are disgusting Mexican food wannabes. You can make bean and cheese nachos really easily. Just take some corn chips and put re-fried beans on them and then grated cheese and heat it up for 30-45 minutes. Yum!

im not sure about the chimichaga..but i do know how to make tacos
buy hard shell tacos..or soft. First, spread refried beans over them and then add corn, beef, tomatoes, lettuce. Sprinkle it off with cheese and add sour cream and hot sauce. Put in the microwave for 30 seconds-1 minute (depending on how many tacos you have).

Here's one for black bean salsa that I love.
One can Mexican stewed tomatoes.
(that's stewed tomatoes with green chilles and onion. You can add them yourself if you can't find it in a can.)
One half bottle dark beer. (I like Negra Medello)
Black pepper to taste.
cook over very low heat until reduced. It should be thick but not like paste. this takes about 30 minutes or so. stir constantly.
Add one can of black beans, drained.
Heat through until the beans are hot.
Add 1 tablespoon of cilantro.
cool and serve with corn chips.
I make this for picnics and partys. You can also serve it as a salsa for tacos.

Quesadillas In a large frying pan heat a tsp of canola oil over med/high heat. Place a large flour tortilla in the pan and top it with shredded cheddar, and shredded cooked chicken if you wish, or cooked ground beef, or cooked chopped shrimp. Top with another layer of cheese. Place another tortilla on top, and flip with a spatula when bottom tortilla is golden brown, then cook about a minute more 'til the second tortilla is golden brown. Remove and slice into wedges. Serve with sour cream and salsa. ______________________________________... Pollo con Arroz (Mexican Chicken and Rice) Preheat oven to 400 degrees. Bake 2 skinless chicken breasts basted with canola oil, salt/pepper, a dash of garlic powder, and a dash of cumino for 20 minutes. At the start of the baking time, heat a Tsp of canola oil in a frying pan over med/high heat. Add a cup of uncooked white rice and stir with a wooden spoon until golden brown. Add water until it covers the rice by a 1/2 inch. Add 2 Goya or Knorr Tomato cubes and stir until dissolved. Add 1 diced white onion, 1 diced green bell pepper. Reduce heat and simmer uncovered over low heat until rice is tender, adding more water only if needed once evaporated, after checking rice. Dice chicken and add to rice.

mix up some beans, rice, chopped or shredded precooked meat (pork, chicken, or beef leftovers work great) and salsa, sprinkle some cheese on it, and wrap it in a large flour tortilla. fry it until hot and golden brown. yummy
