It is important to keep your hair covered so it doesn't get in the food. A hairnet is not a mark of distinction and is worn by other kitchen personal. I chefs hat is a matter of style and marking this person as a chef.

the hat which is formally called a "toque" is a sign of authority and expertise...The taller the hat the better the chef.

Actually, they start out very short (close to the scalp) but the high velocity exhaust fans stretch them up!
