I saw in the Food Network, the way the roast a pig for the luau.. is they put a bunch of coals in a big trench, then they wrap the pig already dead, clean and seasoned in a bunch of Banana leaves and cover it with like some sort of cloth and leave this for the whole day cooking. Then is ready. You may want to buy a recipe book for minor details and for your Luau to be a success.

I don't know where you live, but in my hometown we would obtain a pig from a butcher. Then we would rent a portable spit from a party supply center.(they even had an option where someone would come to your place and cook and serve the pig for you) otherwise, All you had to do is light a fire, stick the rod through the pig, place it on the spit, crack open a few beers, and wait about 4-6 hours.

You could probably obtain a pig from a slaughter house and you would roast it in an open pit

The way i used to do this was dig a hole 4 feet deep and 4foot long take about one cord wood burn half the wood put in rocks to cover bottom burn rest wood take pig rap in Clean gunny sacks soak in water tie with chicken wire because pig will fall a part and back in hole but be for you stick the stuff in put a layer of corn stalks down on coals put in pig corn spuds then corn stalks to cover cover hole with board and for get until you are ready to eat it wont burn

You dig a deep pit to put the fire in and line the bottom with large stones to hold the heat.
