Do you have any good recipies? Ones that I don't have to go to a health store.....something I can do from a regular grocery store.

My best friend is a vegetarian and when she and her kids come over for dinner I make spinach mannicotti.Just cook mannicotti pasta until al dente" ( it will cook more in oven) then in a bowl mix ricotta with shredded Parmesan cheese two eggs some garlic powder and baby spinach(in bags by the bagged salad)mix up and spoon into shells. Then in a large casserole dish pour a little Ragu ( or whatever brand) put stuffed shells on top of Ragu and pour enough more sauce to cover then top with shredded mozzarella and Parmesan and some parsley and bake on 350 until cheese is melted and it's all bubbly.Serve with Texas toast (it's in the freezer dept) and salad.Enjoy.

Baked Corn

INGREDIENTS:
2 cups whole kernel corn
1/4 cup chopped onion
1/4 cup green bell pepper, chopped
25 g margarine
2 tablespoons all-purpose flour
1 teaspoon salt
ground black pepper
3/4 cup milk
1 egg
1/3 cup cracker crumbs
1 tablespoon butter, melted ( = 15 g )

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a large skillet, saute onion and green peppers in the margarine. Using a wooden spoon, stir flour, salt, pepper and milk into the sauteed mixture. Stir corn kernels and egg into the mixture before pouring the entire concoction into an ungreased medium-size casserole dish.
Combine cracker crumbs and melted butter in a small bowl. Pour the mixture over the casserole.
Bake in a preheated 350 degrees F (175 degrees C) oven for 30 to 35 minutes.

If your not a vegan, this one is good. Vegetarian Tacos and kids love them. I just use some Boca ground "beef" and use a packet of taco seasoning add a little water until the sauce thickens. Then heat up some taco shells and fill with the "Beef" top with shredded cheese, lettuce and tomatoes (Salsa optional)

You might as well cook tofu vegie soup......
1 Tofu, cut into cubes
1 medium size carrot, cut into cubes
3 stocks celery, thinly cut
dried mushrooms, cut into strips
1 beated egg
1 chicken cube
Simply boil 3 cups of water with chicken cube, tofu, carrots, celery and mushrooms for 5 minutes. Then add the egg. Serve.
Yummy.....

Here's another one......
Mash the tofu and mix with 1 beaten egg and 1 grated carrot. Put in a molder and steam in a steamer or deep fry. Serve with mayonnaise or catsup.

I'm not sure if as a vegetarian you eat eggs or not...so ...

Omlet in a Bag (keep in mind you only have to use ingredients you like...all my boys eat are ham, eggs and cheese but they do like "helping" chop)

2 eggs (my hubby eats 4)
chopped onion
bell pepper
chopped jalapeno
slices olives
chopped mushrooms
chopped tomatoes
cheese

Start water boiling in a large pot.
Crack eggs in ziploc freezer bag (gallon for 4 eggs, quart for 2 eggs) seal bag, shake to mix egg. I saute the onion, jalapenos, bell peppers and mushrooms in a little butter. Add all ingredients to bag. Shake again. Add bag(s) to water when it is at a hard boil. 20 min. for 4 eggs, 13 min. for 2 eggs.

Birds Eye frozen stir fry vegetables( comes with its own suace packets), Morningstar Farms veggie chicken or beef strips.

Saute the veggies in oilve oil, add stir fry sauce and veggie strips heat through and serve over cooked rice.

Confetti Quesadillas

2 red bell peppers, cored, seeded and diced
2 green bell peppers, cored, seeded and diced
2 orange bell peppers, cored, seeded and diced
1 can of sweet corn
1 can of black beans
2 onions, diced
1 2-cup pack of shredded cheddar cheese
Flour tortillas

Sautee the vegetables in a frying pan in olive oil
In another frying pan, place 1 tortilla
Place cheese on one half
Put filling on same half
Put cheese on top of filling
Fold over
Cook until stuck
Repeat until you run out of something

Sorry...I hit submit too soon the first time. Following is an AWESOME one that I make a lot. The flavors may be too intense for kids to appreciate, but I think you will like it. The alcohol evaporates from the wine.

White Bean-and-Vegetable Stew in Red Wine Sauce

3 cans white beans
1 onion, peeled
2 whole cloves
8 cups water
6 tablespoons chopped fresh parsley, divided
1/2 cup diced celery
1/2 cup diced carrot
1 teaspoon salt
1/4 teaspoon dried thyme
2 bay leaves
2 cups thinly sliced leeks
2 cups (1-inch) cubed chopped peeled celeriac (celery root) or 2 cups sliced celery
1 cup (2-inch-thick) sliced carrot
1/4 teaspoon black pepper
1 garlic clove, minced
4 tablespoons chilled butter or stick margarine, divided
2/3 cup diced shallots
1 cup dry red wine

Cut onion in half. Stud one onion half with cloves; dice remaining onion half. Add clove-studded onion, diced onion, 8 cups water, 1/4 cup parsley, 1/2 cup diced celery, and next 4 ingredients (diced celery through bay leaves) to a large pot with the beans; bring to a boil. Cover, reduce heat, and simmer 30 minutes. Discard clove-studded onion and bay leaves. Add leeks, celeriac, and sliced carrot; bring to a boil. Cover, reduce heat, and simmer 30 minutes or until sliced carrot is tender. Drain bean mixture in a colander over a bowl, reserving 1 1/2 cups liquid. Return bean mixture to pan. Stir in pepper and garlic.

Melt 2 tablespoons butter in a medium skillet over medium heat. Add shallots, and saute 3 minutes. Add wine, and bring to a boil. Reduce heat, and simmer until liquid almost evaporates (about 8 minutes). Remove from heat. Cut 2 tablespoons butter into small pieces, and add wine mixture, stirring until well-blended. Gently stir butter mixture into bean mixture. Stir in reserved cooking liquid, and simmer gently for 5 minutes. Garnish with 2 tablespoons chopped parsley.

NOTE: Celeriac is a pain to use, and the flavor is not much stronger than celery.

Where I live, you can go to the frozen section on Safeway or Albertons'. They have veggie corndogs, burgers, sausages, chick'n nuggets; all tasty.
