I lived 800 miles south of Brownsville for 5 years. Here's the recipe you're looking for. Enjoy !

SOPA aka Fideo

1 6-8 oz package Mexican pasta
** ( stars, Fideo, ABCs, or Melon seed type,
found in Mexican foods section )

1/4 cup Oil
2-3 cloves Garlic, minced
1 Large or 2 small Serrano Chili Peppers,
seeds, ribs removed, & minced
1 small white Onion, diced
1 Tomato, any size, diced
1/4 to 1/2 cup minced fresh Celantro
2 TB Sugar
1/2 cup Tomato Sauce
1 1/4 to 1 1/2 cups Chicken Broth ( more or less )

Have all prep work done before starting.
Use a large non-stick pot or skillet that has a tight fitting lid.
NO SALT is added, since this is normally served with meat dishes
that are on the spicy side.

Heat oil on medium. Add Pasta and saute, stirring CONSTANTLY,
until the pasta is lightly browned.
Then, working quickly; add remaining ingrediants in order given.
Mix together lightly; Lower heat to a simmer.
Put lid on pan, and time it for about 14 minutes.

Check the last 5 minutes for doneness & liquid content.
IF it needs more liquid; STIR, and sprinkle NO MORE then 3 TB of broth, tomato juice or water over the pasta and recover.
You want the pasta to steam to an "al dente" state, with a minimum of liquid;not boil to mush.

This is an every day side-dish in most mexican homes,along with Refried Beans, and Mexican Style Rice . I also have these recipes.

The recipe above sounds yummy. I make it simpler, but simple things are good too.

Chop some garlic and onion, set aside. Open a can of tomato sauce, set aside. Get a container of water, set aside. Put these things, along with salt, within reach of the stove top.

Toast the fideo in some oil in a skillet, and toast for a few minutes. Add the chopped onion, and keep toasting the fideo until it's as brown as you like. The browner it is, the more flavorful it will be. Just don't brown the onion, keep it translucent. Add the garlic and saute for a few minutes but no more. Browned garlic is bitter. Add the tomato sauce, then fill the can with water and add the can of water as well as the salt. Let it come to a boil, then lower the heat, cover, and let it simmer until the pasta is fully cooked. Serve as a side dish.

yes thats how you spell it. are you going to add meat to it? if so, cook that first and set aside.

First, you brown the fideo in a skillet with a little oil. Make sure they turn a little brown, it's not the same as rice. Next, you add in your meat (optional) and about a cup of water, depending on how much fideo you're making. The fideo needs to be completly inundated. Then you add your comino or consummate and tomatoes, onions or chiles and let it simmer for about 10 minutes.

Fideo is a mexican pasta ,if u don't know how to cook this is a very simple recipe. ingredients- Buy a pkg of Goya Shells /conchas,apkg of Knorr caldo de tomate con sabor a pollo it comes in 8 cubes pkg.(its a seasoning of tomato and chicken flavor.a pinch of salt,4 table spoons of corn oil(u can put which ever oil u want)and a ring of white onion for flavor. First in a medium high pan add the oil (it should be enough to cover the surface of the pan barely (not thick)put one cube of knorr in the blender add 1cup of water ,add the pinch of salt and blend til the water looks orange and the cube its completely disolve.open the Goya shells pkg and pour it in the pan stir until the shells look a little yellow ,(don't over toast them cause they will be hard ) at this point pour the water of the blender in the pan then add the thin slice of onion. Let boil until the shells are cooked, keep adding small amounts of water if needed.i like to add quarters of chicken breast . Enjoy if u like u can add a little bit of jalapeno water.For a spicy taste. enjoy.

Watch out easy to burn have everything in reach(prep what you need). The first part is like making rice
