Many reasons.

- It's becoming increasingly easier to be a vegetarian, with so many meat replacements, and protein-rich foods like tofu, tempeh, and TVP.

- The meat industry is no longer what it used to be, cows and pigs living peacefully on farms until the day of a quick and easy slaughter comes. Animals are being bred, tortured, and viciously killed nowadays. And many people don't agree with that, and so are choosing not to support the industry by eating meat.

- People are becoming more aware and concerned for their health, and recent scientific findings show that vegetarian and vegan diets are much healthier than a diet that includes animal products.

The word "Vegetarianism" is nothing new. It's been around since first Hindu yogis landed in Western countries, probably since "Hippie era" more than fifty years ago. Along they brought the concept of free sex, intoxication by drugs to reach Nirvana, Tye dye shirts, wooden sandals, large bead necklaces, incense sticks, transcendental meditation, Yugo prayers and concept of human rebirth in another form.

These days meat has traces of drugs fed to those animals and vegetables has animal growth genes for shelf life and healthy looks beside other genetic manipulation. Latest research has shown meat was not really as bad as first thought and fruit & vegetables are as good for health as they ever was. There are many neccessary nutrients you have to have from different type of foods including meats. Moderation in all types of food intakes and regular exercise saves health and give you a chance to get best of both world to nourish your body and to avoid major deseases.

Finally people are waking up to the fact that we don't need meat and our planet will be better off when meat consumption ceases. There would be no poverty if we ate the grains fed to animals. Cruelty is another factor, animal torture is so unnecessary just for the enjoyment of meat eaters.
Disease is another reason, even fish is not safe to eat as the oceans are so polluted now.

People these days, especially women, are becoming overly sensitised toward animals.

They rarely see animals as something bred and raised to be eaten, but as something cute and fun, often a pet, so the thought of eating it seems gruesome.

Luckily there are still people out there with more sensible outlooks.

It isn't healthier, that's a myth, little better than propaganda.

Because meats are not as healthy as they once were with all the hormones, antibiotics, etc. Also the inhumane way they keep and slaughter the animals.

I think part of it is because of factory farming conditions where animals aren't treated humanely. People also worry about heavy metals, food-borne illnesses, antibiotics, hormones, etc. that are part of animal products.
