I am looking for some simple appetizer type recipes for outdoor entertaining

These are pretty easy and you can make them up in advance



Crab Rangoon

1 pack wonton wrappers
1 package cream cheese
1 can crab meat (or a small package of fake crab from the fish section of your supermarket)
1 can water chestnuts, drained and chopped
1 green onion, chopped fine.

Water for assembly
Peanut oil for frying

Mix the cream cheese, crab (make sure you pick out any cartilage), water chestnuts and green onion in the blender. You can use a little of the crab liquid or 2T of milk if it's too thick. Blend until smooth.

Lay out a wonton wrapper and put a spoonful of the cheese/crab mix in the center. Dip your finger in warm water and run it around all 4 sides of the wonton wrapper. Then either pull the 4 corners to the center to make a star shape and seal the edges, or fold over diagonally to make triangles and seal. Make sure you push out any air as you're sealing.

Lay them out on a cookie sheet as you're making them. It's fine for the skins to dry out as you're making them.

When you're ready to cook them, heat the peanut oil over medium high heat and drop the Crab Rangoon pieces in, cook til golden brown. Take out of oil and let drain.




Puff Pastry Chicken

You'll need mini muffin tins for this.


1 package puff pastry
your favorite chicken salad recipe, with the chunks made finer than normal.
Cilantro and grape slices to garnish.

Roll out the puff pastry. Cut into 2" squares. Press into the mini muffin tins and bake as directed on the package. Remove from oven and cool. If it puffed out too much in the oven, press your thumb in the center while warm to make an indent for the chicken salad.

Put a spoonful of chicken salad in the center and garnish with cilantro and a sliver of grape.



Greek Tenderloin Bites

Cube a beef tenderloin into 1" pieces. Marinade about an hour in Greek dressing. Skewer onto shish kebab skewers or bamboo skewers (soaked in water so they don't burn up on you). Give all sides a few grinds of black pepper.

Grill on all 4 sides to sear, but not cook all the way through. Slide pieces off the skewers onto a serving plate and let people pick up their own with cocktail picks

Serve with a Greek Tzatziki sauce with extra garlic in it.



Also, you can make simple pastry shells that you can fill with anything from shrimp salad or ham salad to cream cheese mixtures.

Make up your favorite pie crust recipe. Cut the main ball into 4 pieces. Cover with plastic wrap and refrigerate. Take out one ball at a time. Roll out VERY thin on a piece of waxed paper (about the thickness of a piece of cardboard that comes inside dress shirts).

Cut into 2" circles and fit into mini muffin tins. Bake in a preheated oven at 425 degrees about 5 mins...til just a light golden brown. Let cool 30 seconds, then lay them out on a cookie sheet to cool.

Keep baking til you have 3-4 pieces for every guest. These will last several days in the fridge and can also be frozen, if needed. When you're ready to serve, fill with any kind of salad or non-runny filling.

Here's a simple recipe that requires 1) Large whole mushrooms and 2) Bacon - that's it!

Preheat the oven to 400 degrees.

Wash and dry the mushrooms, then wrap bacon around each of them (1 slice per shroom). Secure with a toothpick and place on a baking dish. Bake for 15-30 minutes, or until the bacon is as crisp as you like it.

These are ALWAYS a hit for me at parties!

Boy, you got lots of good ideas here!

One to add to the choices is a bell pepper-rice dip. It's finger good with flavor.

The trick is to make a large pot of rice - flavored or plain, it doesn't matter. THEN take one bell pepper for every four guests - cut them in half, scoop out the membranes, and pack each half with the rice. I add a bit of butter, baby whole onions, pimientos, white pepper, butter, and sometimes some grated cheese. You can, in fact, use whatever appeals, including some hot chili sauce, garlic, or other tasty components (come to think of it, sesame seeds might be fun, too).

Wrap these puppies in foil, loosely, so there's room for steam expansion. Cook between 20 and 30 minutes in a 350-degree oven (fahrenheit).

After removing from the oven, open the foil casings (watch out for the steam!), and empty the rice into a large heated bowl you can cover. Cut the peppers into wide strips and poke them down into the top of the rice.

The peppers are then used like spoons to scoop up the savory rice. They will be a little floppy, but it tastes sooooo goooooooddddddd.

This is a favorite with all our family and friends, I get asked to bring it all the time...and am happy to 'cause it is so easy.

8 oz cream cheese
1 cup salsa (i use Pace hot picante sauce)
1 4 oz can slices olives
tortilla chips

Put cream cheese on a plate, top with picante, top with olives. Put chips in a bowl, serve.

Another real easy one. 2 jars tostitos cheese sauce (over by the tortilla chips) put them in the crock pot, turn on high till warm then turn down to low or warm. Serve with tortilla chips.
OK 1 more.
Package of dry spinache dip. Make as per directions. Get 2 loaves of the round bread from the bakery section of the grocery. I usually get 1 white and 1 brown. Cut the middle out of one loaf. Save the bread you have cut and cube it. Put the spinace dip into the middle of the loaf you cut. Take the second loaf and cube it. Put the "dip bread" on a tray and arrange the cubed bread around it. Look fancy and sooo easy!
PS if ppl ask the spinache dip is homemade lol

Personally I'd do marinaded shrimp wrapped in bacon on the grill
A fresh veggie platter with various dips
Strawberries with chocolate, sour cream and whipped cream dips
Several types of bruchetta (typical tomato, artichoke and palm hearts, and tapenade)
And maybe flank steak done of the grill and sliced extremely thin and by the bruchetta so people can top the bruchetta of choice.

Add a variety of iced teas, sodas and chilled wines

Easy, elegant and mostly prepared ahead or just before serving

I am a Filipino and I particularly like to serve my guests LUMPIA serve with Sweet Chili Sauce. You can get the recipe on the web as it is one of the most popular appetizer, people cannot get enough of this.

OK here's some fun ideas.
Veggie platters with ranch dip are always good.

Here's a quick and easy one. One can of chili and a bar of cream cheese. Mix and heat in a pan and serve with tortilla chips. Serve hot.

Fruit Dips are also good. One jar of marsh mellow fluff and a bar of cream cheese. Heat the marsh mellow flush for about 10 sec in the microwave and make sure your cream cheese is soft. That will make it easier to mix. Chill before serving.

Crispy Cheese Poppers
1 package (8 ounces) cream cheese, softened
1 fresh jalapeño pepper, stem and seeds removed, chopped
1/4 cup grated cheddar cheese
18 wonton wrappers (from a 16-ounce package), thawed if frozen
1-1/2 cups vegetable oil

In a medium bowl, combine the cream cheese, chopped jalapeño, and Parmesan cheese; mix well. Place a wonton wrapper on a flat work surface. Dip your fingers in a small bowl of water and moisten the edges of the wrapper. Place about 1 tablespoon of the cheese mixture in the center of the wrapper and fold diagonally to form a triangle. Seal the edges firmly with your fingers. Continue with the remaining cheese mixture and wonton wrappers. In a large deep skillet, heat the vegetable oil until hot but not smoking. Fry the wontons in batches for 30 seconds per side, or until crisp and golden. Remove with a slotted spoon to drain on a paper towel-lined platter. Serve immediately.


Easy Meatball Appetizers
large bag frozen fully cooked meatballs
bottle honey-barbecue sauce
2 tablespoons honey
2 tablespoons dijon mustard

Place meatballs in crockpot for 1- 1/ 2 hrs until cooked through, pour off any water that’s accumulated. Mix honey, mustard and barbecue sauce together and pour over meatballs. Heat through and serve.



Tomato Poppers
Cherry tomatoes (about 4 per guest)
2 pkgs. cream cheese, softened
1 pkt. ranch dressing mix or italian dressing mix
1/4 cup shredded cucumber

Place cucumber on papertowels, sprinkle with salt, let sit for at least one hour to drain away water. In bowl, combine cream cheese, dressing mix and cucumbers. Mix well, salt and pepper to taste. Remove tops and some of the inside of the tomatoes. Place cream cheese mixture into a ziploc baggie, snip off one corner and pipe filling into tomatoes. CHill and serve.

Fruit Kabobs! Use grapes, melon balls, strawberries on skewers. They're easy to make and serve.

If you have electricity, use a crockpot for cocktail weiners w/BBQ or meatballs w/gravy or BBQ. Guys seem to really enjoy the "meaty" snacks.

Chilled, grilled veggies on a tray are also good. These can be grilled ahead of time with a little olive oil. Use asparagus, mushroom or mushroom caps, squashes, whatever.

Get half kg rice put it in hot or cold water throughout night. Put it in Mixy grind put some curd (half cup) and again mix. Put this mixture in bowel for a day (24 Hours). Next day it will furmanted. Put cooker on gas. Put water and some stand upto 5 cms. Put rice plate and put small bowels one and half inch, put butter or olive oil inside small bowels and pour mixtur 1/3rd of small bowel. Close cooker and get it boiled for 7 to 10 minuted. Indian Idli or you can say Dhokla is ready. This can be served with tomato soup and can be preserved for three days.
