(1) Roasted vegetables (green & red peppers, mushrooms, eggplant, zucchini....) on toasted French bread with mozzarella cheese.
(2) Tomato & avocado with spring greens, red onion, sprouts, vegenaise on whole grain bread. (I add cheddar cheese too.)

Roasted Deli turkey thinly sliced, Virginia baked ham thinly sliced, crispy bacon, provolone cheese, avocado, lettuce, tomato, red onions if you like and Mayo or honey mustard on thick slightly toasted wheat honey nut and oat bread with pickle spear and either a fresh fruit salad on the side or some baked lays with a nice tall glass of iced tea or lemonade!

Sweet Potato Sandwiches

Ingredients
3 brown bread slices
3 similar sized white bread slices
2 medium sweetpotatoes, boiled, peeled
1/2 cup cabbage, finely shredded
1 tsp. mixed herbs (basil, rosemary, oregano, etc.), crushed
1 sprig fresh mint leaves chopped
1/4 cup eggless mayonnaise
1 tbsp. butter
1/2 tsp. sugar
salt to taste
pepper to taste
Method
1. Slice sweetpotatoes into thin rounds, keep aside.
2. Sprinkle sugar, a little salt, on cabbage, keep aside for 5 minutes.
3. Mix mint leaves into mayonnaise.
4. Butter both sides of all slices, grill till crisp and golden.
5. Arrange sweetpotato rounds on one side of brown bread slices.
6. Sprinkle mixed herbs over them.
7. Spread mayonnaise over the slices.
8. Sprinkle salt, pepper, shredded cabbage over it.
9. Place a slice of grilled white bread slice over it.
10. Cut very carefully into 2 triangles.
11. Serve hot and crisp with chilli garlic or tomato sauce.
Making time: 30 minutes
Makes: 6 triangular toasted sandwiches

if you are a complete vegetarian/vegan and want no meat products at all then try this one............
poppy seed role, purple onion, romaine lettuce, Italian tomato slices, minced garlic, sliced yellow peppers, a couple slices of jalapeno, brown spicy mustard, sprinkle with sunflower oil and vinegar,
make a dip with artificial beef bullion cube.
