I simply love salmon with cream cheese and capers and if you are serving this as a 'finger food', it might be a little tricky since salmon can break up. Also, since you are allowing capers, (those little green balls will find themselves all over the floor) that, too, can be tricky. This is what I did: I had bagels already cut and separated on a tray. Ok, that's easy. Guests could get one or both sides. Then they moved on to the cream cheese, where they had a choice of cream cheese plain, or cream cheese with capers already mixed in! A small sign in front of the dish indicated what the 'green things were'. Finally, the smoked salmon was piled high and plenty of forks and spoons(salad forks will do) on the table. The guests could load up the cream cheese on their plate, with or without capers, and bagels, and then load up with salmon (use a silver spatula) - either mixing together, or enjoying each separately. Hope this works for you. (p.s. my daugther just suggested that you serve a bowl of the capers with a big spoon, or have small ready made cuplets filled with capers - something like you'd put sauce in with a top to avoid spilling....) great idea, I think

If it is good quality smoked salmon, you don't need a knife. Just serve with a small fish fork, and the layers will separate very easily. Just be sure to plate it with the proper side up for flaking - if you serve it upside down so that the layers aren't naturally presented, you will end up with a torn-apart mess.

If the salmon isn't sliced yet, serve with a sharp knife and a spear fork (two tines).
If it is sliced, a fork or a pair of tongs would be perfect.
Remember to use a small slotted spoon for the capers so they drain.

Anytime someone is serving salmon buffet style, it should be served with a special serving fork(one bigger then a regular eating fork)to pull the salmon flesh apart to be served an individual's plate.

Some kind of platter with a spatula. Go to the thriftstore they usually sell them there for under $5.00.
