take a nice garden vegetable bagel, lightly toasted, generously shmear with chive cream cheese, then layer with plenty of lox (your local bagelerie should have this, or try the local deli -- especially a jewish deli...just remember that a kosher deli will try to dissuade you from putting meat and dairy together in (or on) the same dish.)

other ways i like bagels...take an asiago cheese bagel, again, lightly toasted, a generous shmear of cream cheese (here you could use plain, or chive, or sun-dried tomato cream cheese), then top with a slice of white onion that has been caramelized in butter in your saute pan (don't forget to blot off the onion before you place it on the bagel and cream cheese...you want the flavour, not the drippiness of the melted butter)
