CHILIES RELLENO

8oz. whole canned green chillies
1 lb. grated Monterey Jack cheese
2 eggs
1c sour cream
¼ tsp salt
1/8 tsp pepper

Remove seeds from chillies. Cut pieces flat. Put 1 layer in greased 8x8” pan. Sprinkle with ½ of the cheese.
Spread rest of chillies then the rest of the cheese. Beat eggs until frothy. Add sour cream, salt and pepper. Mix. Pour over chilli layers. Bake uncovered in 350F for 45 min, until set. Serve hot. Serves 6.

Chain restaurants like El Torito or Acapulco usually have Americanized versions of Mexican food, like taco salad or fajitas. Fajitas are actually American food. Taco Bell and Del Taco aren't Mexican at all, they're American fast foods.

Look for a hole in the wall, and if it has a front screen door that bangs shut, and fly paper hanging in the corner, and if the walls are painted different colors, and if the staff can't speak English, you've found the right place. Oh, if you can find chicharrones en chile verde on the menu, or pozole, then you've hit the jackpot! A place like that is the real deal, and just about anything is authentic.

Personally, I the cheese tamales from La Mascota Bakery in East Los Angeles. Other favorites are chicharrones en chile verde, turkey with mole served with rice and beans and tortillas, and menudo served with warm soft corn tortillas and all the fixins - chopped onion, lemon juice, oregano. Mmm!!!

Mexican food choices vary according to the person doing the eating. Tastes depend on the mouth of the taster. Experiment with different restaurants and food brands. Some people like it hot, some mild, some really hot, some barely hot, some full of peppers, some few peppers; just enjoy and taste at a lot of places and different food to form your own opinion.

Best Mexican food?

Taco - meat, beans, lettuce, tomatoe, sour cream, guacamole

Burrito - meat, beans, lettuce, tomatoe, sour cream, guacamole

isn't it all the same with a little different wrapper?

(Don't get me wrong, I love Mexican food but it is all about the same ingredients. Just a little different mix depending on where you go.)

I prefer to go to La Lomas in Denver.

It's all good!!!I love chicken and cheese enchiladas and beef fajitas, charro beans, green sauce and fresh salsa I could go on and on.Now I want Mexican!!!

Oh man, the steak fajita. It's so good with all the red & green peppers, onions, rice, cheese, and of course steak.

Don't give me the beans, they look like vomit.
