Gazpacho
Arroz con pollo
Cubano salad (potatoes, asparagus, green onion in a mayo/sour cream mix)
Camembert with grapes and strawberries
Banana trifle (your favorite tiramisu recipe, except substitute a cooked vanilla pudding, rum and bananas for the coffee and marscapone)

Then a nice Sangria with the dinner and Mojitos afterwards.

Have you tried looking for Cuban menues on google.com. Cuban menues can be along the lines of PLENTY of fresh fruit and salad. Spicy pork or chicken. They eat a lot of fish. Rice cooked with black-eye peas and onions. Donkey bananas (small) are cooked and used, along with dashin and/or plantain. Sweet potatoes.
Cuban cuisine is a mixture of spanish, african, westindian and south american cuisine. Wine, well cuban rum is nice!

Well when i went to cuba (trekking) earlier this year. our meal consisted of

fruit to start (to flush the intestinal tract) like papaya, pnapple and melon
then rolls and butter
then a small protion of chicken and rice for main course, or you can have fish. monk fish and seabass is very popular out there.
then coffee (you can't beat cuban coffee!)

the cubans don't really do desert as far as i can remember. they just have dinner and coffee then get really drunk on rum afterwards. lol. try and get some banana rum or coffee rum. that really rocks. lol

don't worry about wine. Serve the ever-so-fabulous mojito!

2 oz white rum (the mango infused is delicious)
Juice of 1 Lime (1 oz)
2 tsp Sugar (or 1 TBS simple syrup; 1part sugar:1part water disolved)
2-4 Mint sprigs
Soda water

Lightly muddle the mint and sugar with a splash of soda water in a mixing glass until the sugar dissolve and you smell the mint. Squeeze the lime into the glass, add rum and shake with ice. Strain over cracked ice in a highball glass. Top with soda water, garnish with mint sprig and serve.

I would go with a nice grilled piece of meat, be it pork or chicken, black beans or red beans and rice, plantains.

hhmm.. cuban food... the first thing that pops into my head is black beans and rice with yummy fried plantains and ice cold beer!
