There are many "breeds" of chickens. As far as a hatching egg chicken and an eating egg chicken, no such thing. All hens lay eggs reguardless if a rooster is present or not. All eggs can be eaten reguardless of them being fertilized by a rooster or not... as long as the eggs are collected daily and refrigerated. Any hen will lay eggs and try to hatch them if a rooster has been in with her, that's what they call broody hens. Now there are certain breeds of hens that are better for laying or brooding and that is a conversation in itself. Go to McMurray.com and request a free catalog. In it there are brief descriptions of each breed they sell and in those descriptions it will tell you if the hens are good for laying, brooding, or eating.
Yes, hens need a rooster if you want the hen to lay eggs that can hatch out as baby chicks. No rooster, no baby chicks, but you will still have eggs.

The difference is the presence of roosters in the flock. Usually a flock laying eggs intended for food has no roosters, therby making the chances of someone finding a chick in there breakfast egg zero.
Flocks laying hatching eggs have roosters and are frequently vaccinated for more things so they have healthy chicks.

All layer(hens) eggs can be eaten just as long as they have not be fertilized by a rooster, but hens will continue to lay eggs without a rooster around. Some breeds are more consistent layers while some are just good for the stew pot.

If you have a rooster with your hens some of the eggs will be fertile and wouldhatch if one of your hens sat on them for 21 days.
If not you pick them up and eat them.
No difference.
Hens will lay eggs with or with out a rooster around. They do not care at all.

it doesn't take different chickens to have baby chicks. the egg does have to be fertilized, so a rooster has to be present. if the egg is fertilized, the hen then has to sit on the egg to keep it warm so it will hatch. unfertilized eggs remain as eggs and are collected to be eaten.

There are different kinds of chicken but when you eat eggs it is a baby chick that hasn't hatched yet.

The difference between them is one is fertilized, and the other is not... both the same egg and same type of chicken.
