White blood cells (a.k.a. leukocytes) are cells which form a component of the blood. They are produced in the bone marrow and help to defend the body against infectious disease and foreign materials as part of the immune system.

Red blood cells are the most common type of blood cell and are the vertebrate body's principal means of delivering oxygen from the lungs or gills to body tissues via the blood.

red bloos cells or erhytrocytes are smaller than white blood cells or leucocytes. they are also more numerous and contain haemoglobin in their interior. red blood cells also do not have a nucleus and have a small depression in the middle, while leucocytes have nulceous (tehy can be identified according to it: whether it is sausage like or divided into 4 parts etc.). also their function is different: leucocytes fight the infections and viruses in our body, while the red blood cells suppy other cells in our body with food oxygen and carry away carbon dioxide.

It is the same reason for both your questions-- different genes switch on or off in different cells in a process called differentiation. Even though the cells share the same genome, different genes are expressed in different cells. The genes that are expressed in a given cell determine the cell type.
