Broiled Dill Salmon
Ingredients:
½ cup melted butter or olive oil
2 tsp. lemon juice
1 tsp. salt
1 tbsp. fresh dill chopped
1/8 tsp. red pepper
4 salmon steaks, cut 1 inch thick (about 2 pounds)
Preparation:
1. Place melted butter, lemon juice, salt, fresh chopped dill and red pepper in small bowl and stir to combine.
2. Preheat broiler.
3. Place salmon steaks on lightly greased pan and brush with half of seasoned butter.
4. Broil, 5 inches from source of heat, 5 to 10 minutes.
5. Turn heat to 400°F, close oven and bake an additional 5 - 8 minutes.
6. Brush with remaining butter blend. Serve.

Sautéed Tilapia with Lime
1-1 1/3 pound tilapia fillet, about ½ inch thick
3 tablespoons all-purpose flour
1 garlic clove, minced or pressed
Salt and pepper
½ cup dry white wine
1 tablespoon Nellie & Joe’s Key West Lime Juice
½ tablespoon butter
1 tablespoon olive oil
3 green onions, chopped
Rinse fish and pat dry. Put the flour on a plate and season with salt and pepper. Dredge the fillets in the flour, patting to remove excess. In a small bowl, combine garlic, wine, Nellie & Joe’s Key West Lime Juice and butter then set aside. Heat the oil in a 10 to 12-inch frying pan over medium-high heat. Add the fillets without overlapping (you may need to cook in 2 batches). Cook until golden on the bottom, about 3 minutes. Turn the fillets over and cook until opaque through the thickest part, 1-2 minutes more. Transfer the fish to a platter and keep warm (cover with foil or place in a 200º degree oven). Add the wine mixture to pan and boil, scraping up cooked bits, until reduced by half, 2-3 minutes. Stir in the onions and heat on low about 30 seconds. Pour the sauce over the fish and serve.

Key Lime Baked Fish
1 large white fish fillet (dolphin, snapper)
Salt and pepper to taste
1 medium sweet pepper
1 large garlic clove
1 medium onion, sliced into rings
1¼ cup Nellie & Joe’s Key West Lime Juice
4 tablespoons olive oil
1 tablespoon cider vinegar
1 bay leaf
1 teaspoon oregano
Paprika
Clean and score fish. Place fish in large baking pan and sprinkle with salt and pepper. Place onion rings on top of fish. Mix together oil, vinegar and Nellie & Joe’s Key West Lime Juice and pour over all. Place bay leaf in center of fish. Lightly sprinkle oregano and paprika over surface of fish. Bake at 350º degrees.

Lime Lemon Ginger Garlic Chopped Onion. Soak them in that for 4/6 hours Then heat up a pan with nut oil. Drop the thin cut salmon in some corn flower with just a touch of pepper and drop into the pan. Fry till golden brown. Instead of wine vinegar use the lime lemon and ginger you have left to make a salad dressing

OMG I have the best fish sauce for you. I call it the poor mans fish sauce. I usually use it over white fish but it should work well with salmon also. Juice one lime into a bowl, add 1tbl spoon of honey, and a tea spoon of tobasco or hot sauce. OR you can do what i do which is use those little packets of hot sauce that come with chinese food. They are not too hot and pre measured. Anyway you mix it up and toss it into the micro for 30seconds to a minute. Now you can use this as a marinade or drizzle over cooked fish. Hope you enjoy

i use lime,pomegranate molasses, garlic, spring onions, soy sauce. Put it all in a bag with the salmon, and marinade for a couple of hours. I do alter the amounts depending on how sweet, savoury or garlicky i want it. Cook how you like really, in foil, on a griddle pan or just in a dish in the oven. Its lovely.

It kind of depends what your planning to do with the salmon... if you plan to put it in the oven.. you can just sprinkle it with lime juice, add salt and pepper, some white wine (not too much) and fresh chopped dille
