it wouldnt be orange cinnimon clover mead anymore, it woudl be just cinnamon clover mead, i would think for flavor you should stick to it, or throw in a similar size fruit.

To make mead, you only need honey, water and yeast. The rest is all extra.

Think about it like this:

a sugar source + water + yeast = booze

all else is the kind of booze like fruit, grain et cetera

I would suggest you do not use bread yeast to make mead. You need a better recipe. Get good honey and wine yeast. The bread yeast should never be used in brewing -it is really not good.

There are also liquid "y yeasts".



grapes = wine
apples = cider
barley or wheat = beer, ale
honey = mead
and so forth

Yes it will work without Orange peel. Unflavored Mead is harder to make without picking up Off-Flavors.You can also substitute any thing you want in the recipe to flavor it.P.S. When making Mead some recipes call for Citric Acid,which is in Oranges, to help the brewing process.

You'd still have mead just not that flavor.
BTW: try mulling it too... good stuff.
