heat 1 tbsp vegetable oil.

add:

1 clove garlic, minced
1 inch ginger, minced
1 tbsp chilli sauce.

cook for 1 min.

add clean bok choi, still wet from washing.

stir & cook 3 min.

add 1/4c oyster sauce (or hoisen).

cover & cook till done

I always use it for my all-time favorite authentic chinese recipe:

Rubb a whole fresh big cut of pork belly with plenty of salt and chinese 5 spices. Put in fridge overnight.
Then roast it in oven for 2 hours. Cut into half an inch chunks to serve.
Boil some thai rice (no salt !)
Wash the Pak Choi, put in in pan with 2 or 3 tbsp of oyster sauce and a little water. cover with lid and cook 3 minutes. Add 10 drops of roasted sesame oil (this is mandatory).
Serve rice + veg + pork.

Cut the bachoy, stirfry it wih onion garlic and tomatoes, ad a little water and season it with salt and pepper

Soy sauce, brown sugar and ginger. (maybe garlic if you don't have a date)
