People who suffer from Coeliac disease are allergic or extremely sensitive to gluten, which is found in wheat, rye, barley, triticale and oats. Check the food labels for various forms of gluten such as "wheat", "flour", "wheat starch", "modified starch" and similar substances. You must avoid eating foods containing these, including most bread, pasta, and breakfast cereals.
You may be able to digest rice or corn. Also look in health food stores for special gluten-free and wheat free breads, pastas, biscuits and rice cakes.

There is hidden wheat and gluten in many foods that you wouldn't even think of - even licking an envelope can make you sick if you're really sensitive. You need to learn a whole new vocabulary to know what to look out for, and you have to read every single label of everything you buy. Even something like french fries can make you sick if they've been fried in the same oil as breaded stuff, some places (like McDonald's) use dedicated fryers so their fries are safe. My daughter is hyper-sensitive, and we have to scrutinize absolutely everything she eats.

Keep to a low-residue diet. Low fat, low fiber, high carb, high protien. Your body will absorb most protien and carbohydrates, but some fat and most fiber can pass through in your stools. Try to eliminate as much residue as possible.
