I live at the beach and the shrimp are so fresh coming straight off the boats.

Use a sharp knife. The head part is simple. Some people, like me, just pinch the sides between the thumb and forefinger and pull them off, but if you want the shell intact, just chop it off with a knife. Don't chop too far down, i.e. past the first shell segment. Deveining is equally easy, but your knife must be sharp and you must be careful. Take your beheaded shrimp and lay him down flat on a cutting board. Pin him down with a couple fingers from one hand and using the other hand, slice down the center of his back. You should only have to go into the shrimp a little bit before you see the dark green vein. Once you have made a slit a little more than halfway down his back, lengthwise, rinse him under some cold water, and you're done!

Yeah, with a butcher knife, then get lots of pictures of shrimp with heads and beheaded, and some newspaper articles from THE NEW YORK TIMES and Elmers glue them to the wall in your bedroom with lots of candles burning underneath on the dresser

if you don't want to go through all of the trouble of doing it your self just look for ez peel shrimp. they are cleaned and split already but still have the shell on!!
