Kevlar (made by DuPont) is woven in rotating patterns giving the vests added strength. Sometimes the Kevlar is mixed with other materials which help to reduce the weight or the blunt force trauma from being hit with a bullet.
Some vests were made out of Zylon, but that material is currently under recall. The Zylon material has been found to degrade more rapidly over time than expected (especially when exposed to wet environments--including sweat!). If you have a vest made out of this material, contact the manufacturer and get it replaced!

Some are made of Kevlar, aka "second chance vests" For the more determined cops, there are ones made of ceramic plating that will stop a .50 caliber bullet. but Kevlar is the prefered vest. Dont shoot any of them though. Most of them are here to help make the world safer. Plus its illegal and law enforcement agencies frown upon it...

Mostly Kevlar, but also Spectra fibre which is even stronger, the outer covering that you can actually see is usually made of a tough ballistic nylon material that is washable. There are also hard trauma plates that are made of composite materials that can be stuffed into the vests to give even greater ballistic protection than the vest alone.

It is a Kevlar/ Poly blend around a foam pad and a thin steel plate.
They will stop anything aside from a jacketed Armour piercing round.
