chicken parmigiana. brown chicken breasts or tenderloins. add 1/2 or more jar of Chunky Ragu Garden Combination, dash of olive oil, a little garlic, a little sweet Marsala, a little Chef Paul Prudhomme "Poultry Magic" (optional). cover and simmer over low heat while you boil water and cook the fine spaghetti. A nice salad too. My 19 year-old son made this for us for supper tonight. it was awesome. Smelled great when I came into the house from work. Tasted like restaurant quality.

If you want to do the summer thing, try a beer can chicken on the grill. Whole chix, can of beer with a little beer poured out and a little smoke seasoning put in beer if you're using a gas grill. Season the Chicken with some salt, pepper, garlic powder, chili powder, put beer can carefully in chicken. Grill about 45-60 minutes until chicken is done.
While chicken is cooking, can prep some steamed veggies or some grilled veggies (summer squash, mushroom, red pepper, onion, etc with a little balsamic vinegar and olive oil). Some hardy, homestyle mashed potatoes are good - if you can make good mashed potatoes, you're in. Lots of cream and butter, works well if you take some green onion and let it sit in a mix of cream and butter for a while before you mix it with the potatoes. Roasted garlic? All the better!
All that won't even take the time it takes for the chicken, so you still have a little time to get dessert ready - gotta be chocolate, maybe a little fruit so it doesn't seem so fatty. Chocolate covered strawberries? Or a rich chocolate ice cream with fresh strawberries or raspberries. Good luck!

Chicken and Tortilla Soup:
For those who are passionate about Southwestern cooking, you may want to garnish this soup with some sour cream and cilantro. Some fresh-made guacamole with corn chips would be in order as well.
Ingredients

1 pound boneless, skinless chicken breast
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 tablespoon olive oil
1 Spanish onion, small, peeled
2 garlic clove
1 teaspoon red chili powder
1/2 teaspoon ground cumin
1 tablespoon tomato paste
6 cup chicken broth, low-sodium
4 corn tortillas
1 lime, juiced
2 scallions, thinly sliced on the diagonal
Cook:30 Min (cooking time)
Preparation
1. Preheat oven to 450 degrees F (230 degrees C). Season the chicken with salt and pepper. Heat the oil in a stock pot over medium-high heat; add the chicken and brown the pieces on both sides until firm and cooked, about 8 minutes total. Remove the chicken when cooked.
2. Puree the onion and garlic together in a food processor to a fine paste. Add the puree, chili powder, cumin, and tomato paste to the stock pot; saute stirring constantly, about 1 minute. Then add the broth and bring to a simmer.
3. While the soup simmers, spread the tortillas on a baking tray and toast in the oven until nutty brown, about 5 minutes. Watch closely and turn during toasting to prevent burning. When cool enough to handle, break the tortillas into the simmering soup and cook an additional 5 minutes.
4. Transfer chicken to a sheet pan and bake until chicken is completely white throughout, about 5 minutes. Add any run-off juices to the soup. Using a hand-held blender, blend the tortillas in the soup to thicken it. Adjust seasoning with the lime juice and additional salt and pepper as desired.
5. Slice the chicken. Ladle soup into warm bowls and garnish with chicken and scallions.

Make Shish Kabobs, cut chicken into chunks and skewer with veggies like bell peppers,onion, cherry tomatoes and pineapple and grill serve over buttered white rice for desert have berries and whip cream served in martini glasses.If you don't have skewers you can buy wooden ones (soak in water for at least an hour so they won;t burn)in the grocery store wherever they sell knives and stuff and if you don't have a grill you can just broil the Kabobs in the oven.It would be nice to start the meal with shrimp cocktail just mix some tailless shrimp found in your freezer dept with some ketchup, Horseradish, diced red onion and some chopped up avocado serve it on top of a piece of butter lettuce.Don't forget the wine and candles and some cloth napkins would be nice too.

Easy Baked Chicken and Potato Dinner for Two
This baked dish brings home all the flavors of a roast chicken with vegetables, and it makes just enough for two.
2boneless skinless chicken breast halves (1/2 pound)
2tablespoons Dijon mustard
1/2cup Reduced Fat Bisquick® mix or Original Bisquick® mix
3/4pound small red potato, cut into fourths
1small red or green bell pepper, cut into 1/2-inch pieces
1small onion, cut into 8 wedges
Cooking spray
2tablespoons grated Parmesan cheese, if desired
1/2teaspoon paprika
1 . Heat oven to 400ºF. Spray baking dish, 13x9x2 inches, with cooking spray.
2 . Brush chicken with 1 tablespoon of the mustard, then coat with Bisquick mix. Place 1 chicken breast half in each corner of pan. Place potatoes, bell pepper and onion in center of pan; brush vegetables with remaining mustard. Spray chicken and vegetables with cooking spray; sprinkle evenly with cheese and paprika.
3 . Bake 35 to 40 minutes, stirring vegetables after 20 minutes, until potatoes are tender and juice of chicken is no longer pink when centers of thickest pieces are cut.

Cheddar Broccoli Chicken Skillet
Ingredients:
4 boneless, skinless chicken breast halves (about 4 ounces each)
1/4 teaspoon salt
1/4 teaspoon ground black pepper, divided
1/8 teaspoon paprika
1 teaspoon vegetable oil
1 3/4 cups milk
1 can (10 3/4 ounces) condensed cheddar cheese soup
2 cups fresh or frozen broccoli florets
2 cups instant long-grain white rice
1/2 cup (2 ounces) shredded cheddar cheese
Directions:
1. Season chicken breasts with salt, 1/8 teaspoon of the black pepper and paprika. Heat oil in Large Skillet over medium-high heat until hot. Add chicken breasts; cook 5-7 minutes on each side or until chicken is no longer pink in center. Remove chicken from skillet; keep warm.
2. Add milk, soup, broccoli and remaining black pepper to skillet; mix well. Bring to a boil; stir in rice. Top with chicken; cover with lid. Reduce heat and simmer 5 minutes.
3. Remove skillet from heat. Sprinkle cheese over chicken and rice. Cover with lid; let stand 5 minutes before serving.
Yield: 4 servings

Butterfly a raw boneless chicken breast. Put it in a ziplock back and pound it thin. Spread pesto sauce on the breast and roll it up jelly roll fashion. Secure the chicken roll with toothpicks and bake in a covered dish (cover an uncovered pan with foil if you don't have one). Bake according to a basic baked chicken recipe.
When it is done, take it out and let it cool. Slice the chicken roll into 1/3 inch medallions. Lay the medallions over a bed of your favorite pasta tossed with the remaining pesto sauce (careful not to cross contaminate with the portion of pesto you spread on the raw chicken).
Serve with a loaf of hot crusty bread from your grocer/deli. Fill saucers with extra virgin olive oil and a few dabs of basalmic vinegar to dip the bread in. Open a bottle of red wine.... Mission Accomplished! :)

Gotta go with the grilled chicken Brest. Charcoal no gas. Use a dry rub and injection. Cook slow adding some oak wood to the fire to start smoking in the beginning. She will be impressed with your ability to master a grill. Reg. charcoal not the fast light kind (very important.)

stuff some herbs like rosemary or whatever you like under the skin of a whole bird. chop up an apple and stuff it inside the bird. rotisserie it or bake it (at about 350*)basting it with a mixture of melted butter, wine, and garlic until it's done. throw the apple pieces away when it's done and let the chicken sit for about 10-15 minutes before carving it. serve it with home made garlic mashed potatoes, bread, and a nice wine. happy anniversary.

Barbecued chicken, cole slaw, corn on the cob, cornbread and watermelon is great summer fare. A cold beer like a pale ale or red beer would make a nice complement too if you drink....otherwise lemonade or ice tea with a sprig of mint should work too.
