It takes patience and a very sharp knife. Go slow so as not to cut the hide. Where you start depend on what you want to do with the hide. I will give you 3 ways. If you want the complete hide with head and feet attached do this;

Spread the rear legs and spit the hide for one foot straight across to the opposite foot, cut the feet off from the legs, leaving them attached to the hide. Work the skin away from the legs and from the tail. Then roll the skin up over the body and head. You will need to use your skinning knife to help free the hide from the flesh. Peel out the front legs and cut the feet just as you did the rear feet and leave attached to the hide. The head is most difficult . Work very slowly and peel the head out , even down to the lips and nostrils. When the skin is removed you can go back and peel the skin from all four feet.
The next method is much easier. Slit the hide from the tip of the tail to the mouth on the underside of the body. Just roll the skinn back until it is off. This will leave the back of the hide in tact.
If you want to use the belly hide for something like a wallet, slit the animal from the tip of the tail to the mouth along the back and roll down to the stomach.
Probably the first one is not going to turn out so well. You may want to practice on your neighbors cats until you perfect the skinning technique.

Tail first, along the belly. Then remove the head and peel.
