The link from the email I had no longer works and the recipe is no longer in their archives...A google search cannot locate it either.

I have never heard of a carrot cake in a pastry but it sounds good. Maybe mine will suffice...it is called Cinnamony Carrot Cake

Carrot cake ingredients:

1 yellow cake mix (18 oz)
1 1/4 cup water
1/2 cup (1 stick) butter melted and cooled
3 eggs
2 cups shredded carrots (I buy preshredded in the produce section)
2 tsp ground cinnamon

Heat oven to 350. Combine all ingredients except carrots and cinnamon in large bowl. Beat as directed on cake package. Stir in carrots and cinnamon. Pour batter into greased (i spray with Pam) 9x13 pan. Bake 35-40 min Cool Completely. Frost with cream cheese frosting. I have a recipe for frosting, if you want it email, but I just use a tub of Duncan Hines frosting (I think this is the brand name).

Carrot Cake with Coconut Frosting
2 and 1/2 cups all- purpose flour
2 cups sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
3 cups shredded carrots
1 cup applesauce
2 tsp. vanilla
2 eggs
1/2 cup raisins
1/2 cup chopped nuts

Combine flour and the rest of the dry ingredients in a large bowl. Add carrots, applesauce, vanilla, eggs, raisins and nuts and mix well. Pour batter into a greased and floured 13 x 9 inch baking dish and bake in a preheated 350 degree oven for 50 - 60 minutes or until cake is completely done in the middle. Allow to cool before frosting.

Coconut Frosting

1 8-oz. package cream cheese, softened
3 cups powdered sugar
1/2 cup butter
2 tsp. vanilla
2/3 cup flaked coconut

Combine cream cheese, powdered sugar, butter and vanilla and beat until smooth. Stir in coconut and spread over cooled cake.

The Skinny: The recipe calls for applesauce in place of the usual oil so you are already off to a good start. Use your favorite sugar and egg substitutes and low fat cream cheese.

lol - I remember when I first heard that dried dung was used as a fuel to cook food. -- I had read about llama herders of Peru doing that. I can still remember my expression - which is now the answer to your question ... Yuck!
