Me,too! Some folks take that al dente too far. I want them cooked. I don't mean until they are falling apart mushy, either. There is a happy medium. I agree with the person above. If you want them crisp, take them right out of the package and dip them in the sauce. LOL, good one. And there is enough starch left for the sauce to stick to.
And anyway, this al dente stuff is new. Us old folks were taught to cook the noodles until they are just soft, then put on the sauce and let them absorb a little sauce, and finnish cooking. The way some people fix it, there is no sauce left, it soaked up into the noodles. And I hate crunchy noodles. It is just a time saver thing that restaurants cooked up [get it, cooked up. Ha.] to be cheap, it costs money to hire a chef and boil water. The less they cook it the faster it gets out of the kitchen and to the paying customer. My theory, anyway.
For a great recipe, go to allrecipes.com. Husbands Delight is the name of the dish. It has noodles, hamburger, tomatoes, cheddar cheese, and the topping is Philly cut with sour cream. I eliminated the sugar, and added several tablespoons of catsup. I just layered the noodles, meat mix, dairy layer, then the cheese, I did not get fancy like the recipe says to. The above substitution adds the sweetness, and makes the tomatoes richer tasting. And I did not cook the noodles al dente. This recipe is high calorie, but lots of nutrition, and it is yum-mo. I think you are under cooking your al dente. if you are cooking to al dente, the carry over from cooking (they are hot) will finish them off, also assuming you are using a sauce, the right amount of starch on the al dente noodle will grab a hold of the sauce better.

No, I agree. Cook those noodles, I don't like eating rubber bands. When I eat pasta, I want to enjoy the flavor, not hear little crunching sounds. If you like them that way, why bother cooking them? Just dip them in the sauce right out of the package like chips and dip.

What are you talking about? Al dente is cooked, just *slightly* firm and it tastes better that way. Soggy noodles have no flavor. Learn how to friggin' cook.

Sorry, I prefer my noodles al dente. My grandmother used to cook them until they melted in your mouth without chewing them, as she had no teeth. I found it remarkably gross.
