I have often wondered this myself. But then if you go to a grocery store they have fruit pies sitting out on a table for sale all the time. They are not in firig, so I would think it is ok to leave an apple pie at room temp as long as it was covered to keep out ants.

Leave it in the pie pan and stick that puppy in the fridge. Some like it hot, so you can pop it back in the oven at 325 degrees for 12 to 15 minutes before serving it. Don't forget the vanilla ice cream to serve with it!

I leave it at room temp, but my family eats it within 48 hours. If it's going to be longer than that, I put it in the fridge because it will start to grow mold.

I keep mine in the fridge so the pie doesn't get all fuzzy and so it will last a little longer (in case it doesn't get eaten right away). You can always nuke it in the microwave if you want a warm piece of apple pie.
