But if they're trying to hide it - for whatever reason - you wouldn't just come out and ask them, surely?!

This is absolutely TRUE. When you "fancy" someone...your pupils dialate. I thought the guy who told me this was lying to me. I'm super conservative and had a thing for this guy a couple of years back. My life was in absolutely NO shape for dating and I just resolved to enjoy his company and make a great friend. One day he just came on to me super strong and I was totally taken back and asked him what he was doing. He told me without a shadow of a doubt that he KNEW I liked him. I asked him how and he told me because my pupils widened suddenly when I looked at him. He actually showed me, by looking at a magazine in the same light and then looking at me and BOY OH BOY did his pupils POP. LOL When I told him what they looked like, he told me that mine did the same thing when I looked at him....talk about an akward moment. LOL

I'd say so, yes. If they really like you it's hard to hide it as they drop subtle clues - they blush when you're around or when speaking to you, they keep fiddling with their hair, you catch them looking at you and they look away. Eye contact is really key here.

Not sure why someone would try to hide it though...

walk past them in a crowded room. Accidentally (and you have to carry this off well or you're sunk) brush against the back of their hand with the back of yours. If they jump (electric shock style) then that's a pretty good indicator.
