German Potato Salad
This is a delicious dish served hot or cold.
8-10 medium sized potatoes
6 ounces center-cut bacon
1 medium onion
2 eggs (NOT boiled)
2/3 cup cider vinegar
2/3 cup white sugar
2/3 cup finely chopped celery, from the heart
1/2 cup beef stock or broth
4 garlic cloves
1 tablespoon dry mustard
1 teaspoon salt
1/4-1/2 teaspoon red pepper flakes
ground black pepper


1. Cook the potatoes with the jackets on by either boiling or in the microwave.
2. When they have cooled enough to handle, remove the skins and dice into approximately 1/2" cubes.
3. Place them into a large bowl and add the chopped celery.
4. Chop the bacon and mince the garlic finely, and cook them together in a saute pan until the bacon has browned.
5. Chop the onion and add to the bacon mixture. Saute over med-low heat stirring frequently until the onions start becoming translucent. If you are using dehydrated chopped onion, add it to the next step instead.
6. Mix together the vinegar, sugar, beef stock, eggs, salt, pepper, mustard and pepper flakes in medium bowl or large measuring cup until the the eggs are well incorporated and the sugar is dissolved.
7. Add to the pan with the bacon mixture. Cook and stir over medium heat until bubbling and thickened.
8. Pour over the potatoes and mix together well.
9. Serve now or later, hot or cold.

Warm German Potato Herb Salad

Ingredients:

2 lbs. Small New or Red Potatoes, washed well and cut into eighths
7 slices of Bacon cut into 1/4" strips
1 small Red Onion, finely chopped
1/2 tsp. Granulated Sugar
2 1/12 tbsp. Cider Vinegar
1/4 cup Chicken Stock
1 tbsp. Parsley, chopped
1 tbsp. Rosemary, chopped
1 tbsp. Thyme, chopped

1. In a large saucepot cover the potatoes with salted water by 1 inch.

2. Bring to a simmer and cook until soft. Approximately 5 to 8 minutes.

3. While potatoes are cooking, heat a large non-stick sauté pan over medium-high and cook the bacon until crispy and golden brown.

4. Remove the bacon, leaving 3 tbsp. of the fat in the pan.

5. Sautee the onions over medium-high heat until the onions are soft. About 2 to 3 minutes.

6. Add 1 1/2 tbsp. of the vinegar, sugar and stock and simmer for 3 minutes over low to medium heat.

7. Drain the potatoes and in a large bowl put the potatoes in with the onion mixture.

8. Season with salt & pepper; add the remaining 1 tbsp. of vinegar and chopped herbs.

This Potato Salad should be served warm or at room temperature.

German Potato Salad

Recipe courtesy Bobby Flay

3 pounds new potatoes
1 yellow onion, quartered
1/2 pound bacon, diced
1 large red onion, diced
3/4 cup cider vinegar
1 tablespoon mustard seeds
1/4 cup canola oil
Salt and freshly ground pepper
8 green onions, thinly sliced
1/4 cup chopped fresh parsley leaves

Preheat the grill to high. Place potatoes in a large pot with the onion and cover with cold water. Cook, on the grates of the grill, or on a burner, until tender. Drain, discard the onion, and cut the potatoes into cubes when cool enough to handle. Place the potatoes in a large bowl and cover to keep warm.
Place a large saute pan on the grates of the grill. Add the bacon and cook until crisp. Remove the bacon with a slotted spoon and drain on a paper towel-lined plate. Add the onions to the rendered bacon fat and cook until soft, about 3 to 4 minutes. Carefully add the vinegar and mustard seeds and cook for 2 more minutes. Whisk in the canola oil and season, to taste, with salt and pepper. Add the hot dressing to the potatoes and toss gently to coat. Fold in the green onions and parsley. Season again with salt and pepper, to taste.

I just made some this morning! Did 6 large potatoes last night, this morning hard boiled 3 eggs, fried till crisp 3 strips of bacon, very finely chopped 1/4 cup onion , a 1/4 chopped dill pickle and lastly 3/4cup Miracle whip (salad dressing) makes 10 cups.....enjoy!
