Tuna Salad Recipes

Ingredients:
1 can (12 ounce size) albacore tuna in water - drained
1 1/2 cup marinated artichoke hearts - drained (reserve the marinade)
1/4 cup chopped sun-dried tomatoes packed in olive oil - undrained
1 1/2 tablespoon finely chopped fresh basil
OR
1 1/2 teaspoon dried basil
1/4 teaspoon coarsely ground black pepper

Directions:

Place the tuna, artichoke hearts, sun-dried tomatoes, basil, and pepper in a medium-sized bowl.

Add a couple of tablespoons of the reserved artichoke marinade and toss to mix well.

Add a little more marinade if the mixture seems too dry.

Serve immediately or cover and chill until ready to serve.

Serve on greens or in a sandwich. You may use 2 tablespoons of nonfat plain yogurt in place of the mayo for a low-fat salad.

1 (6 ounce) can solid white tuna packed in water, drained
2 tablespoons mayonnaise
1/2 teaspoon Dijon mustard
2 tablespoons grated carrots
salt & freshly ground black pepper

Combine all the ingredients and stir well using a fork.
Refrigerate or serve immediately.

This is a delicious and colorful luncheon tuna salad recipe.
INGREDIENTS:
2 large tomatoes, cut in quarters
1 red bell pepper, cut in matchstick strips
1 green bell pepper, cut in matchstick strips
1 small onion, sliced in rings
1 can (6 1/2 or 7 ounces) tuna in vegetable oil
4 teaspoons olive oil
2 teaspoons wine vinegar
1/2 small clove garlic, finely minced
1/8 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon dry mustard
12 pitted black olives, chopped
PREPARATION:
Arrange tomato quarters on a salad serving platter; place pepper strips and onion rings in center. Drain oil from tuna into a small jar; flake tuna and arrange in center of platter. Make salad dressing: add olive oil, wine vinegar, minced garlic, salt, pepper and dry mustard to tuna oil in jar.

Seal tightly and shake vigorously to blend. Sprinkle over tuna salad platter. Sprinkle chopped olives over the salad.
Tuna salad serves 3 to 4.

Tex-Mex Tuna Salad

Ingredients

(6 servings)

2 cn Solid white tuna in water, drained and flaked (6.5 oz)
1/2 c Sliced ripe olives
1/2 c Sliced green onions w/tops
1/2 c Thinly sliced celery
2/3 c Pace Picante Sauce
1/2 c Dairy sour cream
1 ts Ground cumin
Lettuce leaves OR
Shredded lettuce
12 Taco shells OR
3 c Tortilla chips


Instructions

Combine tuna, olives, green onions and celery in medium bowl. Combine Pace Picante Sauce, sour cream and cumin; mix well. Pour over tuna mixture; toss lightly. To serve, line taco shells with lettuce leaves; spoon tuna mixture into shells. Or, line individual serving plates with shredded lettuce; top with tuna mixture and surround with tortilla chips. Drizzle with additional Pace Picante Sauce; top with additional sour cream, if desired.

Flake off the tuna filet (canned) with a fork, and mix it with mayo . add shallots (green onion), asparagus cut up in 1 inch pieces, and red pepper julienne. mix it all in. little salt and pepper and a few lemon rhinds scraped into it... Add a spoon full of sour cream to cut the grease and make it smoother... ... optional parsley flakes prefferably dried parsly, and a little paprika.. Serve on endives, or any crispy lettuce or just by itself... yummm! If you really want to go all the way sprinkle anchovy powder onto it and a little bit of bacon bits... delish!
You can also do this with chicken breast and add garlic, for a better combination...

I take a can of tuna, 1 tablespoon of mayo and about 2 tablespoons of sweet pickle relish. mix until homogenous. serve on crackers or toast and enjoy!

Tuna, Mayo, Relish and Onions...you can add salt/pepper and some paprika too...yumm!

i have a pasta one:

spaghetti noodles only***not shells or maccoroni
1-tuna
2-capers
3-green and black olives *crushed or sliced (better crushed)
4-a little anchovie paste/fillet crushed
black peper to taste
mincel garlic and garlic powder
