Peppers, hot peppers, red peppers, crushed peppers, jalapeno peppers and lots of chili powder. Also a great add in, there is a spicy diced tomatoes I think Red Gold makes them they are in a yellow can, they add a great kick to it, and use the spicy chili beans (if desired) to add even more heat. Crockpot "Not for Sissies" Red Hot Chili

I just won "First Place" at a country fair with this recipe. The fresh tomatoes and chili peppers give it a fresh and pleasant taste.

1 lb bacon, cut up in small chunks
4 lbs ground beef
4 (1 lb) cans canned kidney beans
28 ounces canned crushed tomatoes (Hunts has them spiced for chili)
12 ounces tomato paste
2 onions, finely chopped
4 ounces chili powder
4 ounces cayenne pepper (dry powder)
2 cans beef broth
2 fresh tomatoes
2 jalapeno peppers or serrano peppers
3 cloves garlic
1 tablespoon ground cumin
1 tablespoon oregano
1 1/2 tablespoons paprika

Fry the bacon until it starts to brown, then put it into the crockpot.
In the bacon drippings, brown the ground beef.
Put the ground beef, beans, crushed tomatoes, tomato paste, onions, chili powder (In Southern California we have a great variety available, but Gebhardts would work), and the cayenne into the crockpot with the beef broth.
Cut the stems off the fresh jalapenos and cut them in two or three chunks.
place the peppers along with the garlic and whole fresh tomatoes into a food processor and puree the three ingredients.
Put this into the crockpot, stir to mix and let it all cook for 10-12 hours on low or 5-6 hours on high.
By making a puree out to of the peppers and garlic, you get a more evenly dispersed blend.
I used the tomatoes to give some moisture to the puree.
Serrano chilies are three times hotter than jalapenos so don't let their small size fool you.

This is a recipe that I worked on for years, to size it down and make it fit for family consumption. Prepared the originial recipe for fishing and hunting trips. Never had anybody not come back for seconds, even kids.

It is an edible recipe, if you want it hotter, just increase the Chili Power, or the Cayenne Pepper, or both.

Won't change the flavor, just heats up your internal plumbing!


David's Chili Con Carne Y Frijolies

2 Cups Small Red Beans (Washed and Picked Over)

2 Lbs. Lean Ground Beef (3 Lbs., If Pork Is Omitted)

1 Lbs. Lean Ground Pork

1 Whole Green Bell Pepper

1/4 Cup Peeled Garlic (Coarsely Chopped and Slightly Crushed)

2 Large Peeled White or Cooking Onions (Coarsely Chopped)

3 Tbls. Chili Powder

2 Tbls. Ground Oregano (Increase By 1 tsp. If Whole Crushed Seeds Are Used.)

1 Tbls. Ground Cumin (Increase By 1 tsp. If Whole Crushed Seeds Are Used.)

1 Tbls. Ground Coriander (Increase By 1 tsp. If Whole Crushed Seeds Are Used.)

1 tsp. Paprika

1 tsp. Ground Rosemary (Increase By 1/2 tsp. If Whole Crushed Leaf Is Used.)

1 tsp. Ground Sweet Basil (Increase By 1/2 tsp. If Whole Crushed Leaf Is Used)

1 tsp. Ground Chia Seed (Increase By 1/2 tsp. If Whole Crushed Seeds Are Used.)

(Note) Sage May Be Substituted For Chia Seed.

1/2 tsp. Ground Cloves

1/2 tsp. Ground Bay Leaf (Increase To 1 tsp. If Whole Crushed Leaf Is Used.)

1/8-1/4 tsp. Cayenne Pepper

Salt To Taste (1 tsp. Is A Good Starting Point)

1 1/2 Cups Tomatoe Puree or Paste (Tomatoe Sauce Makes The Chili Too Runny)

1 1/2 Quarts Bean Stock (From Cooked Beans)

(If Only Whole Herb Ingredients Are Available, They May Be Run In A Blender For Smoother Consistancy.)

In A Large Pot, Cover Beans With At Least 6 to 8 Cups Of Water. Bring To A Boil and Then Simmer Until Beans Are Soft, But Not Mushy. Drain Beans and Retain The Stock For Use In The Chili.

In A 4 Inch Deep Iron Skillet, Brown The Meat At A Medium High Heat. After Browning, Add Onions, Garlic, Bell Peppers, and All The Herbs. Stir and Toss This Dryish Mixture For About 15 Minutes. Add Tomatoe Puree or Paste and Mix Well. To This Add 1/3 Of The Bean Stock (More Can Be Added For Consistancy.) Reduce Heat and Simmer 12 Hours Or So, Adding Bean Stock As Necessary.

In A Large Pot (Bean Pot Is Good), Mix The Chili and The Beans and Simmer For At Least 2 Hours Before Serving.

Left Over Chili and Beans Can Be Frozen and Reheated For Later Use.

Serves 8 to 10 People

Hot Red Chili
Yield: 10 Servings

Ingredients

20 chili peppers; dried
4 lb ground beef; coarsely ground
1 ts Oil
1 md onion; chopped
5 garlic clove; minced
1 ts Oregano
1 ts cumin powder
Salt and pepper to taste
10 oz tomato sauce
3/4 c Water
2 1/2 tb corn flour

Instructions

Remove stems and seeds from chili pods. Wash and put into a large pan and
cover with water. Simmer until tender. Drain. Place peppers in food
processor and puree. Put aside. Brown meat in small amount of oil.
Add onion and garlic. Simmer for 10 minutes. Then add the oregano, comino,
salt and pepper. Add peppers to the chili meat. Add tomato sauce and water,
then bring to a boil. Reduce heat and simmer for 3 to 4 hours.
More water may be added during cooking. When almost done, thicken with
flour/water paste.

If you want REALLY hot chili, don't use prepared chili powder as your sole source of heat. It's usually fairly mild. Instead, consider adding some dried chiles such as chiles de arbol (long thin dried red chiles), dried chipotle chiles (dried, smoked jalapenos), chile pequin (small dried red chiles) and/or any other interesting dried chiles you can find. Toast the chiles briefly in a dry, heavy skillet (don't let them burn) and then grind them up into a powder seeds and all. Also, you can chop up fresh chiles -- jalapenos (hot), serranos (hotter) or habaneros (hottest)-- and add them as you cook the onions. If you leave the seeds and the white veins in when you chop, they will be even hotter. However, you might start gradually so that your chili doesn't become nuclear and inedible.

2c cans homel xtra hot chili beans
2 jalopina red hot peppers
1 pkg of chili mix with onions and peppers
brown groung beef till red is gone then add cans of cili beans and chili mix, chop and add jalopina peppers - make sure you have plenty of milk to put out the fire.

hamburger,4lbs, one tanis ball sise onion, chopped up fine,either brown beans or kiddney beans, yuk, i prefer brown beans, one table spoon of cyanne pepper,one table spoon of chili powder,3 cans 600ml. of spagettie sauce, i medium can of tomato paste.half a cup of ketchup. mix all together after your hamburger is cooked, then put in the oven at 175 to thicken for about 2 and a half hours striing evry halh hour. youll love it, my family does and the resturant i make it for.
