I think it's one of these two reasons:
(1) you pinch it off with your sphincter
(2) you don't pinch it off, but as it hangs there, tensile forces cause elongation. The bit that elongates most is going to be the bit nearest your ring, because it's carrying the most weight. That bit gets thinner due to the stretching and thus has a higher stress concentration than the rest of the poo. Higher stress, more elongation, leading to higher stress, until the poo is so thin at that point that the ultimate tensile strength of the poo is reached. Plop. Pointy poo.
