All meat shrinks in size and weight during
cooking. The amount of shrinkage will depend
on its fat and moisture content, the
temperature at which the meat is cooked, and
the length of time it is cooked. The higher the
cooking temperature, the greater the shrinkage.
Cooking ground beef at moderate temperatures
will reduce shrinkage and help
retain juices and flavor. Overcooking draws
out more fat and juices from ground beef,
resulting in a dry, less tasty product.
When combining ground beef with other
ingredients, do so gently. Gentle handling is
the key to moist, flavorful patties and ground
beef dishes. Rough handling will result in a
firm, compact texture after cooking. For a
juicy, flavorful burger, do not flatten patties
with a spatula while cooking; this allows the
juices to escape.

This is due mostly to the fat dripping off of the meat as it cooks. Buying leaner ground beef might help this problem but the trade off will be a less flavorful hamburger. Although I hate to admit it, fat IS flavor!

They shrink because of the loss of fat and moisture, you can use a leaner ground beef so it won't shrink so much. I prefer mine juicy so I get the ones with more fat in it.

it's the water evaporating and fat being swollen and losing so the patty is there no fat just a patty with amazing juices

here is an answer you can use!!!!...... to keep them from shrinking and turning into a ball just use a tablespoon and push a small dip into the tops and this will keep them from shrinking into a ball.
