Since stuffed peppers have just about everything in them, and are quite filling, I am going to suggest a salad of mixed greens, tomatoes, Vidallia onions and blanched asparagus tips - If you don't like onions, put in some cucumber, or add everything and make a "kitchen sink" salad!

Here are some recipes for other types of salads and dressings. :

Mango and Spinach Salad with Creamy Cashew Dressing

For the dressing:
1/2 cup unsalted roasted cashews
Zest of 1 lime
1/4 cup lime juice
1/3 cup water
2 Tbsp honey
1 tsp Dijon mustard
Salt and pepper to taste

For the salad:
5 oz. pkg. baby spinach - wll washed and rinsed or you will get grit
1 small, ripe mango, peeled and sliced. You can also use an unripe green mango if you want are real tart taste, but the ripe mango is "blessed" by the lime dressing - Yum!

Method
Using an electric hand mixer, puree ingredients for the dressing until smooth. Divide and mound the spinach, undressed, on plates, decorate with mango slices and dot the top of the salad with the creamy cashew dressing.

Shrimp salad with creamy pepper-citrus dressing


1/2 cup low-fat or regular mayonnaise - not miracle whip
3 tablespoons orange juice
Juice of 1 lime
1 tablespoon honey
2 teaspoons white wine vinegar
2 teaspoons minced fresh tarragon or 1 teaspoon dried
1/2 teaspoon salt or to taste
1/4 teaspoon red pepper or to taste
Freshly ground black pepper
1 bag (9 ounces) pre-cut mixed salad greens
16 cherry or grape tomatoes, halved
1 green bell pepper, sliced
3 green onions, diced
20 large shrimp, cooked

Preparation time: 15 minutes

1. Whisk together mayonnaise, orange and lime juices, honey and
vinegar in
small bowl until well blended. Add tarragon, salt and peppers to
taste.

2. Combine lettuce, tomatoes, bell pepper and green onions in large
salad
bowl. Top with shrimp. Toss with the dressing.

Mustard Vinaigrette:

2 tablespoons red wine vinegar
1/2 teaspoon Dijon mustard
Kosher salt and freshly ground pepper, to taste
1/3 cup extra-virgin olive oil
2 teaspoons minced fresh parsley
2 teaspoons minced fresh chives

Combine the vinegar, mustard, salt and pepper. Slowly add the olive oil in a steady stream, briskly whisking until emulsified. Stir in the parsley and chives.

Balsamic Vinaigrette

1/2 teaspoon salt
2Tablespoons balsamic vinegar
1 teaspoon lemon juice
1/4 teaspoon dried oregano
1/4 teaspoon fresh ground black pepper
1/4 teaspoon garlic powder
1/2 cup virgin olive oil
Fresh Parmesan cheese

Pour vinaigrette over salad and toss well. Sprinkle finely grated Parmesan cheese over salad.

Mmmmm....a good pork loin goes well with stuffed peppers and also a meaty salad if your stuffed peppers include minced meat with the stuffing. Delicate slices of pork to the side will make this dish perfect~ Yummy~

If you're using rice in the stuffing you don't want what other have suggested as in pasta or taters of any kind. Stick with some fruit. Cut up watermelon, cantaloupe, peaches, strawberries, kiwi. Whatever floats your boat. That will complete your meal and the sweetness will be a nice compliment to the peppers.

Stuffed peppers really don't need a side dish...it's a meal in one! You have your ground beef (protein) the bell pepper itself and the tomatoes in the stuffing (veggie) and the rice in the stuffing (carb). Drink a big glass of milk with dinner, and you should be good. :)

I would just do a green vegetable for contrast (assuming you are using red peppers) Otherwise, the stuffing really is the side dish.

no you don't. stuffed peppers are a well balanced meal. but okay, how about broccoli, cauliflower, and carrots smothered with a cheese sauce.
