When I make a caesar salad, as soon as I put the lettuce leaves in the bowl with the homemade dressing and toss it, it seems that the salad goes limp wothin minutes. Any ideas on how to stop this?

Greens wilt because of heat or acidity.

After chopping the lettuce, a quick bath in ice water will help to stiffen the leaves. Then you want to dry them in a spinner.

Keep the lettuce chilled and the dressing on the side until just before you are serving it. A good chilled bowl helps, too.

Lightly dress the lettuce and let the diners add some more if they want. This will limit the acidity exposure (from the lemon juice in the dressing) and keep the leaves fresher, longer.

Make sure everything is chilled before tossing -- the greens, the homemade dressing, the mixing bowl. Also, chilled salad bowls are a nice touch when having dinner, but it also helps to keep the greens crisper, longer.

Once salad greens are washed, they need to be dried. A salad spinner is efficient. But if you’re in the mood for some fun, fill a clean pillowcase with washed and drained greens, then swing it around until the greens are dry, or until your arms get tired.

Try lemon juice on the lettuce before you dress it, then don't dress it till the very last minute. It works for me!

Don't put the dressing on it until your ready to serve it.
