This works great with Dungeness Crab too! I can't get enough of it.

SWEET LOBSTER WITH BLACK BEAN SAUCE

Makes: 4 servings
Ingredients:
2 lobster tails, each about 8 ounces (1 whole dungeness crab)

Seasonings
4 cloves garlic, minced
2 green onions cut into 1-inch lengths
1 teaspoon minced ginger
2 teaspoons black bean garlic sauce

1 tablespoon cooking oil
1/3-cup chicken broth
1/4 cup Chinese rice wine
2 teaspoons cornstarch dissolved in 1-tablespoon water
1-teaspoon sesame oil
1 green onion, cut on a diagonal into 1-1/2 inch pieces

Open the crab and clean the gills out. Cut the legs into three sections and quarter the center meat portion. Save the yellow creamy stuff and combine in the seasonings below.
Combine seasonings in a small bowl.
Place a stir-fry pan over high heat until hot. Add oil, swirling to coat sides. Add seasonings; cook, stirring, until fragrant, about 30 seconds. Add lobster and stir-fry until opaque, about 2 minutes. Add broth and wine; bring to a boil. Add cornstarch solution and cook, stirring, until sauce boils and thickens, about 30 seconds. Stir in sesame oil and green onion.
