According to the Guinness Book of World Records, the only records they have concerning gum is for the largest gum wrapper collection, and the longest gum wrapper chain. I've chewed gum for maybe 3 or 4 days... Depending on the brand and type of gum, it will start to dissolve or break apart if you chew it too long. So, you can't chew gum for very long periods of time. After a while, it won't be gum anymore!

I chewed the same piece of gum for 2 weeks straight. I was much younger then though. I don't know of any record.
