I am roasting a beef loin and slicing it into thin medallions. I will serve it with dollar rolls for people to tear apart and make sandwiches. What would be a good spread to offer for people to use? (plain mayo mixed with rosemary? etc)

And should I put out some sliced cheese to on the sandwiches too? If so, which variety of cheese?

Creamed horseradish, hot english mustard (perhaps mixed with mayonnaise for less intense heat) or bearnaise sauce would be good choices for accompaniments. And as for cheese, well both blue cheese and goat's cheese go well with beef.

horse raddish mustard sauce is great on beef.try about .com go the grilling section.great recipes on there
